Bati is a traditional recipe of the Rajasthan. Its fusion with maize flour makes it more amazing for the winters.
Ingredients of Makka Bati (Maize Bati)
- Maize Flour - 1.5 cups (200 gms
- Wheat Flour - 1 cup (150 gms)
- Oil - ¼ cup (50 gms)
- Ghee - 3 to 4 tbsp (50 gms)
- Baking Soda - ¼ tsp
- Carom Seeds - ½ tsp
- Salt - ¾ tsp or to taste
How to make Makka Bati (Maize Bati)
For the dough, take 1.5 cups of Maize Flour in a bowl, add 1 cup of Wheat Flour in it along with a ¾ teaspoon of Salt, ½ teaspoon of Carom Seeds, ¼ teaspoon of Baking Soda, ¼ cup Oil and mix all the Ingredients properly.
Take 1 cup of and 2 tablespoons of Lukewarm Water in a cup to knead the dough. The dough required for Bati shouldn't stiffer or softer. Knead the regular dough by adding water in intervals, cover and keep the dough aside for 15 - 20 minutes. After 15 minutes, the dough has set.
Grease your palms with some Oil and knead the dough slightly. Preheat the cooker to make Bati in it, add 2 cups of salt in it and heat it. Place a stand in a cooker and cover to heat it for 7 - 8 minutes on the high flame. In the meantime, prepare the Batis by placing them on the stand.
Grease the plate before placing Bati in it. Divide a dough lump, roll it and press to flatten it. Prepare all Bati in the same way. Place the Batis while maintaining the distance between them. Grease the Bati with some Oil. Lift the plate and place it carefully in the cooker. Close the lid of Cooker to cook them on the high flame for 16 minutes.
Check them after 16 minutes. Batis has expanded and cracked after 16 minutes. They have slightly baked from the bottom so we will bake them for some more time. Cover and cook them for 6 minutes then, check it.
They have baked properly from the bottom too so we will flip them. Close the lid of the cooker and bake Batis for 5-6 minutes. Batis have baked, they appear Golden Brown from both the sides after 6 minutes. It takes 26 to 27 minutes to bake a single round of Batis.
Dip these in the clarified butter. If you want to add an excessive amount of clarified butter in Bati then, break it using a spoon. Hot and crispy Maize Bati is ready to be served. You can serve them with Arhar Dal, Mix Dal, Dip or with Pickle.
You can use Nigella instead of Carom seeds.
You can filter, store and reuse the Salt after baking for the baking process.
Check Bati after every 5 or 6 minutes.
