Buff Vada Recipe & Farali Chutney

Giving a different flavour to the food of this Navratri fast, we are going to make Buff Vada. These will be made in 3 ways, Stuffed Vada, Mixed Buff Vada and Tikki Buff Vada. It is very easy to make them and they will be ready in a jiffy. You will find their taste very amazing, so much so that you will want to make them even after Navratri. So with this easy recipe, you can also make 3 types of buff vada and enjoy their taste with your family.
Ingredients for Vrat Buff Vada
Boiled Potato - 6 (1/2 kg)
Rock Salt - 1 tsp
Black Pepper - 1/2 tsp, coarsely ground
Arrowroot - 100 grams + 3 tsp
For Stuffing
Peanut Powder - 1/2 cup
Desiccated Coconut - 4 tbsp
Sesame Seeds - 2 tbsp
Cashews - 1 tbsp, chopped
Raisins - 1 tbsp, chopped
Ginger - 1 tsp, grated
Green Chilli - 1 tsp, finely chopped
Black Pepper - 1/2 tsp, coarsely ground
Rock Salt - 3/4 tsp
Powdered Sugar - 3 tsp
Coriander Leaves - 2 tsp
Pomegranate - 3 tsp
Lemon - 1
Oil - 2 tbsp
For Farali Chutney
Coriander Leaves - 1 cup
Green Chilli - 2
Ginger - 1/2 inch
Rock Salt - 3/4 tsp
Cumin Powder - 1/2 tsp
Curd - 1/4 cup
Process of making the Dough
In a bowl, grate 6 boiled potatoes with a fine grater. Then in the same bowl add 1 tsp of rock salt, 1/2 tsp of coarsely ground black pepper and 110 grams of arrowroot little by little and knead a soft dough. Then take some oil in your hand and mash the dough lightly. Now cover it and keep it.
Process of making the Stuffing
In a bowl take 1/2 cup of coarsely ground groundnut powder, 4 tbsp of coconut powder, 2 tbsp of sesame seeds, 1 tbsp of chopped cashews, 1 tbsp of chopped raisins, 1 tsp of grated ginger, 1 tsp of finely chopped green chilli, 1/2 tsp of crushed black pepper, 3/4 tsp of rock salt, 3 tsp of sugar powder, 2 tsp of green coriander, 2-3 tsp of pomegranate seeds and juice of 1 lemon. Mix them well.
Process of assembling Stuffed Buff Vada
Make 6 small balls of some stuffing. Then mash the dough well and make 6 small balls out of it. Now after applying oil on the hand, lift a ball and make it round like a peda. Then flatten it and place a stuffing ball in it and close it and make it round. Make the rest of the vada in the same way.
Process of assembling Mixed Buff Vada
Put the remaining stuffing in the dough and knead it by mixing it well. If the dough is oily, then add arrowroot in it and knead the dough. Then break this dough into two equal parts and break 6 balls from one part. Take a ball and make it round and keep it on a plate. Make the rest of the balls in the same way.
Process of assembling Tikki Buff Vada
Break 6 balls from the remaining dough. Take a ball, press it round and give it the shape of a tikki. Keep it on a plate and make the rest in the same way.
Process of frying Stuffed Vada and Mixed Buff Vada
Heat oil in a pan, the oil should be medium-high hot and the flame should be medium-high. Put the first stuffed vada in hot oil and fry it for 3-4 minutes. After 4 minutes, increase the flame and fry them till they become golden brown.
Take them out when they are fried. Then because the oil will become very hot, then reduce the flame to low flame. Then add mixed buff vada and fry in the same way. Increase the flame in the middle and take them out when they turn golden brown.
Process of frying Tikki Buff Vada
Put 2 tbsp of oil in a plane bottom pan and heat it. Place tikki buff vada in hot oil. Fry them on low-medium flame for 3-4 minutes. Then turn them over and fry from the other side for 3-4 minutes. Fry them from both the sides till they turn golden brown and take them out.
Process of making Farali Chutney
Put 2 tbsp of chopped coriander leaves, 1/2 inch of ginger, 2 green chillies, 3/4 tsp of rock salt, 1/2 tsp of cumin powder, 1/4 cup of curd and 1-2 tbsp of water in a mixer jar. Grind them finely. In this way Farali chutney will be ready.
Serve all three types of buff vada with farali chutney. This Navratri, break your fast with these spicy Buff Vada and enjoy their taste.
Suggestions
While frying Stuffed Buff Vada, first fry for 3-4 minutes on medium-high flame. After frying lightly, increase the flame and fry till it becomes golden brown.
If the vadas start bursting while frying, then immediately take them out and heat the oil for 3-4 minutes, then put them in hot oil and fry them.
