Crispy Mathri Recipe

To bring a twist to the snack, today we are going to make Crispy Mathri of Chana Dal. It is very easy to make them and they will be ready in a jiffy. Their taste will be so amazing that you will like to make them again and again. You can make them in large quantities and keep them for a month and eat them. Their spicy taste will enhance the taste of your tea even more. So you can also make crispy chana dal mathri with this easy recipe and enjoy their taste with your family.
Ingredients for Chana Dal Mathri
Chana Dal - 1/2 cup (100 grams), soaked
Oil - 4 tbsp
Refined Flour - 2 cups (250 grams)
Salt - 3/4 tsp
Turmeric Powder - 1/2 tsp
Cumin Seeds - 1 tsp
Carom Seeds - 1 tsp
Dry Fenugreek Leaves - 1 tbsp
Oil for frying
Process of making Dough
Wash and soak 1/2 cup of chana dal thoroughly for 2 hours. Then put 2 tbsp of oil in the cooker and heat it. After removing all the water add chana dal in the hot oil, fry it for 1 minute while stirring continuously. After roasting, add 1/2 cup of water to it, close the cooker and cook on high flame till one whistle.
After a whistle, reduce the flame to low and cook it for 4-5 minutes. Then turn off the flame and let the cooker cool down. When it cools down, take it out in a bowl and mash it coarsely with a spoon. Then add 2 cups of all purpose flour (a little to be saved), 3/4 tsp of salt, 1/2 tsp of turmeric, 1 tsp of cumin (crushed), 1 tsp of carom seeds (crushed), 1 tbsp of kasoori methi (crushed) and 2 tbsp of oil.
Knead a hard dough by mixing them well. If the dough is sticky, then add a little remaining dry flour. Then cover it and keep it for 15 minutes, in this way the dough will be ready.
Process of assembling Mathri
Apply some oil on your hand and mash the dough well. Then divide it into 4 equal parts. Now lift one part and keep the rest covered. Mash this part and make it round, then roll it as thick as the paratha. After rolling, cut the mathris with a cookie cutter and prick them with a forked spoon. Keep the remaining dough with the rest of the dough. Similarly assemble mathri from the rest of the dough.
Process of frying Mathri
Heat oil in a pan, it should be less hot and the flame should also be low. Put as many mathris as you can in hot oil and let them fry. When the mathris float on top, turn up the flame to low-medium and fry them till they turn golden brown from all sides.
After frying, take them out and let the temperature of the oil reduce, then fry the rest of the mathris in the same way. In this way crispy crunchy mathris of chana dal will be ready. Serve them with tea and enjoy their taste.
Suggestions
The dough has to be kneaded hard.
Turn them over and fry them on low-medium flame.
When it cools down completely, you can store it in an airtight container and eat it for more than a month.
