Process of making Sabudana Khichdi
Peel 1 potato, wash it well and cut it into small pieces. Cut them and keep them in water too. Then put 1/4 cup of peanuts in the mixer jar and grind them lightly. Melt 2 tbsp of ghee in a pan. Then add chopped potatoes and fry it while stirring continuously till it becomes light brown.
Take them out when they are roasted. Then reduce the flame to low, add 1/2 tsp of cumin seeds and fry them lightly. Then add 1/2 tsp of grated ginger and 1/2 tsp of finely chopped green chillies to it. After frying them lightly, add soaked sabudana (with water removed) and fry them on medium flame for 2 minutes.
Then put 1 tomato finely chopped (removing the seeds) in it and stir it lightly. After stirring lightly, add coarsely ground peanuts and stir lightly. After frying lightly, add 1.5 cups of water to it, cover and cook for 3 minutes on medium flame.
After 3 minutes, stir it a little and add roasted potatoes, 3/4 tsp of rock salt and 1/4 tsp of crushed black pepper. Mix them well, cover and cook for 3 minutes. Cover and cook till the sabudana becomes transparent, stirring it every 3 minutes.
When sabudana khichdi is cooked, turn off the flame and add 1 tsp of lemon juice and green coriander and mix it well. Take them out in a bowl and serve, in this way sabudana khichdi will be ready.
Process of making Sabudana Paratha
Grate 3 boiled potatoes in a bowl. Then add soaked sabudana, 1/2 cup of groundnut powder, 1/2 tsp of grated ginger, 1/2 tsp of finely chopped green chilli, 1/2 tsp of coarsely ground black pepper, 3/4 tsp of rock salt and 1-2 tbsp of chopped coriander leaves. Mix them well.
After mixing, apply some ghee in your hand, add 4 tbsp of arrowroot and knead the dough. When the dough is kneaded, break a little dough, round it and make a peda. Lay polythene on the board, place a dough in it, apply ghee on both sides of the dough, cover the dough with polythene and roll it.
Now heat the tawa medium hot and spread some ghee on it. Put the paratha on the tawa and cook for 3-4 minutes. After the time is up, spread some ghee and roast it by turning it over. Apply ghee on both the sides and roast the parathas by turning them till brown spots appear on both the sides.
Take off the parantha when it is roasted and make the rest of the parathas in the same way. In this way sabudana paratha will be ready. Serve Sabudana Paratha and Sabudana Khichdi and enjoy their taste.
