Non deep fried Batata vada। No Fry Fried Aloo Bonda

 

A special recipe for those who avoid using much of oil. Tasty and tempting just as the fried batata vadas. 

Ingredients for No Fried Aloo Bonda : 

  • Boiled Potatoes  - 3 ( 300 gms) 
  • Chickpea flour - 1/2 cup ( 60 gms) 
  • Green coriander  - 2 to 3 tbsp ( finely chopped ) 
  • Oil - 1 tbsp 
  • Carom seeds - 1/8 tsp 
  • Cumin seeds  - 1/4 tsp 
  • Asafoetida)  - 1/2 pinch 
  • Turmeric powder - 1/4 tsp 
  • Coriander powder  - 1/2 tsp 
  • Green chili- 1 to 2 ( finely chopped ) 
  • Ginger paste  - 1/2 tsp 
  • Red chili powder - 1/2 tsp 
  • Salt  - Less than 1 tsp ( or to taste) 
  • Baking Soda - 1 pinch 

How to make Aloo vada 

Take chickpea flour in a bowl, add water in small portions and stir to make batter. 2 tbsp less than 1/2 cup water is used to make the batter. Batter of pouring consistency is ready. 

Add 1/3 tsp salt, 1/4 tsp red chili powder, half of 1/4 tsp turmeric powder, carom seeds. Mix all the spices well. Add 1 pinch baking soda to it, mix well. Keep aside for 10 minutes to puff up. 

To make stuffing, take boiled potatoes, peel and crumble them.

Meanwhile heat pan. Add 1 tsp oil to pan, once hot add cumin seeds roast slightly. Keep flame low. Add asafoetida, turmeric powder, coriander powder, finely chopped green chili, ginger paste. Add potatoes to it. Add red chili powder, salt. Keep flame medium. Mash and roast it for 2 to 3 minutes. Add some green coriander. 

After mashing for 3 to 4 minutes. Turn off flame. Keep to cool in a plate.

As the stuffing cools down, grease hands with oil. Pick stuffing make ball, keep in plate. Make all balls likwise. 

Put appam maker to heat, keep flame low, pour 1 to 2 drops of oil in it. 

Lift a ball, coat it with chickpea flour batter. Put it in appam maker moulds to cook for 4 to 5 minutes. Make all balls likewise, then cover and cook.
 
After 4 minutes the vadas are roasted from beneath, Cook till brown then flip. Pour some oil over the cooked part, flip again till brown. Cover and cook again on low flame for 4 to 5 minutes.

Check vadas, flip and cook for 1 to 2 minutes. Take out and keep in plate. 

Aloo Vadas in less oil is ready. Serve it with chutney and enjoy as snacks. 

Suggestions :

  • You can skip pouring oil on the cooked part of the vadas if desired.
