Lauki Halwa Recipe - Dudhi Halwa - Bottle Gourd Halwa

Making Lauki halwa or dudhi halwa is very easy to prepare where grated bottlegourd is cooked till tender and then milk, mawa and dry fruits are added to it. You can make it for any party or whenever you crave for eating some sweet then try making this halwa.

Ingredients for Lauki Halwa
- Bottle Gourd – 1 kilogram
- Sugar – 1.5 cup (300 grams)
- Mawa – 1 cup (250 grams)
- Milk – 1 cup
- Ghee – ¼ cup
- Cashew nuts – 15
- Almonds – 15
- Green Cardamom – 6 to 7
How to make Lauki Halwa - Dudhi Halwa
Rinse the bottle gourd for making the halwa and then peel and remove the stalk from it. Now cut down the gourd into chunks with 3 to 4 inch dimensions and grate each chunks from all sides. Remove the soft portion and seeds in the middle.
Chop cashews and almonds in small chunks. Peel the cardamom and ground the seeds to make powder.
Heat a pan on a flame and place the grated lauki into it. Add milk and mix everything really well. Cover the pan and cook the lauki for 3 to 4 minutes on low flame.
Check the lauki now. Lauki has turned tender. If you see some milk in the lauki, then increase the flame and let it simmer until the milk evaporates completely. Keep stirring the lauki after every 1 to 2 minutes.
When the milk mixes well the the lauki then add sugar to it and mix well. Now the halwa until sugar dissolves completely and the moisture evaporates completely. Make sure you keep stirring the halwa after every 1 minute to prevent it from browning.
Now in anothe roast the mawa. For this, crumble the mawa and add it to the pan. Keep the flame low-medium and roast until there is little change in the color. Keep stirring constantly.
Now when there is change in the mawa and ghee has started leaving it sides, take it out in a bowl. When you that very little juice is left in the halwa, add ghee to it and keep stirring for 2 to 3 minutes. When the gourd is roasted well, to it add roasted mawa, chopped dry fruits and cardamom powder. Mix everything really well and cook the halwa for 1 to 2 minutes. Keep stirring continuously.
Stir and keep stirring for 3 to 4 minute and let the halwa cook through. Keep the flame low. Halwa is now done and ready, transfer it to a plate and garnish with some chopped cashews and almonds. Steaming hot and scrumptious lauki halwa is ready. Serve and relish eating.
Suggestions:
- Keep stirring the halwa constantly while cooking to prevent it from browning at base.
- Let the halwa cool down completely and place it inside the refrigerator. Relish eating this delectable halwa for up to a week.
- Before making the halwa do taste the bottle gourd once as at time it comes bitter in taste and this can spoil your halwa.
