Stuffed capsicum is a unique recipe which can be considered as a snack or a main course. It has the lip-smacking flavour of spices and has a mouth-watering taste. Serving it along with Paratha, Chapati helps to enhance its taste.
Ingredients for stuffed capsicum
- Capsicum - 3 (250 grams)
- Potatoes - 4 (400 grams)
- Oil - 2 to 3 tbsp
- Green coriander (finely chopped) - 2 to 3 tbsp
- Ginger paste - 1 tsp
- Green chilli paste - 1 tsp
- Cumin seeds - ¼ tsp
- Red chilli powder - ½ tsp
- Turmeric powder - ½ tsp
- Dry mango powder - ¼ tsp
- Coriander powder - 1 tsp
- Salt - ½ tsp
- Maggi Masala-Ae-Magic - 1 packet
How to make stuffed capsicum
Hollow 3 capsicums using a knife and remove their seeds too. After hollowing them, take 3 potatoes, boil, peel and mash them into the larger sized pieces. Preheat a pan, add 2 teaspoons of oil in it and heat it too.
Add a ¼ teaspoon of cumin seeds, 2 finely chopped green chillies to it on low flame and saute them. Add a teaspoon of ginger paste, a 1/2 teaspoon of turmeric powder, a teaspoon of coriander powder to it and saute the spices.
Add the mashed, a ½ teaspoon of salt, a ½ teaspoon of red chilli powder, a ¼ teaspoon of mango powder to it and roast them on medium flame. Add a packet of Masala Ae-Magic to it along with some chopped green coriander.
The stuffing has cooked, pour it on a plate and let it cool down for a while. After a while, start stuffing the capsicums using a spoon. Insert the stuffing in capsicums and press it well using the backside of it.
Preheat a wok and a 2 tablespoons of oil in it on medium flame. Place the stuffed capsicums over it on medium flame. Cover and cook them on a medium flame for 2 minutes. While cooking them, rotate them after every interval of 2 to 3 minutes.
After cooking it for 20 minutes, the stuffed capsicums have cooked. Remove them on a plate and garnish with finely chopped green coriander. The stuffed capsicum is ready to be served. Serve it along with Paratha, Chapati, rice or anything as per your desire.
Suggestions
You can use an inch of ginger baton instead of ginger paste.
You can use the remaining oil to make any of your desired curries.
