Super tasty, crispy rice papad are prepared with steaming are sun dried and then fried later.

Ingredients for Rice flour papad
- Rice flour – 1 cup
- Oil – 1-2 tbsp
- Salt – ½ tsp
- Cumin seeds – ¼ tsp
How to make Rice papad
Prepare batter with rice flour
Take rice flour in a big mixing bowl and add water to in small portions. Stir until lumps dissolves completely. When the lumps dissolves, prepare a thin batter. For 1 cup of rice flour 2 cups of water is used. Add cumin seeds and salt to the batter. Cover and keep aside for 10 minutes.
Steam the papads
Take 2 cups of water in a vessel, cover and let the water simmer. When the water starts simmering, take plate which easily fits over this vessel to steam the papads. Grease the plate with some oil and pour 1 to 1.5 tsp of batter. Spread it evenly over the plate. Place this plate over the vessel and cover with another plate. Let the papad steam for 2 minutes. Keep the flame medium during steaming so that there is constant formation of steam in the water.
After 2 minutes, remove the lid and check the papad. There is slight change in the color of papad, it steamed well. With help of tongs take off the plate from vessel and let the papad cool down a little.
Dry the papads over polythene sheets
For drying the papads, take a cloth and cover it with polythene sheet. With help of knife separate the papads from plate. Very gently take out the papads from plate and place it over the cloth with polythene sheet.
Likewise steam all the papads and place them on the sheet to dry. It takes 2 to 3 papads to steam them. With 1 cups of rice flour 12 papads can be prepared.
Dry the papads in sunlight
After preparing all the papads, place them in sunlight to dry. After every 2 hours flip the sides of papad. Dry the papads under sunlight for 1 to 2 days.
Fry the papads
Heat enough oil in a wok. When the oil is heated well, take one papad into it and ffry from both sides. Drain out the fried papad over a plate.
Serve these crispy and taste papads with tea, coffee and serve them as snack.
- While steaming the papads make sure that there is slight change in the color from all sides else it will get difficult to separate out the papads from plate and can break.
- Avoid taking out the papad from plate else it can break.
- You can sun dry the papads directly over the cloth instead of polythene sheet.
- Stir the batter a little prior pouring it over the plate for steaming.
- If you don't flip the sides of papad again and again then they squeeze up too much after drying.
- To make these papads little spicy then sprinkle some chaat masala over the fried papads.
