Ingredients for Rabri Kheer recipe
- Rabri - 250 grams
- Rice - 1/4 cup (50 grams)
- Sugar - 1/2 cup (100 grams) or as per taste
- Cardamom powder - 1/2 tsp
- Raisins - 1 tbsp
- Almonds - 10 to 12
- Cashews - 10 to 12
- Milk - 1 liter
How to make Shahi rabri kheer
Rinse the rice thoroughly and soak them in water for half an hour. After this drain out the extra water and then coarsely grind the rice.
Take milk in a vessel and place it on flame to simmer. When the milk starts simmering, add coarsely grind rice and stir really well. Now stir the milk after every 1 to 2 minute and keep the flame medium.
Finely chop the cashews and almonds. When the rice are cooked through, add milk and rice blend well, then add chopped cashews, almonds and raisins to it.
When rice and dry fruits get tender and kheer gets dense, turn off the flame and mix sugar to the kheer. Also add cardamom powder to the kheer and cover it. Keep it aside for 2 to 3 minutes so that sugar dissolves completely. Open the lid and stir the kheer really well. Allow the kheer to cool down and then add rabri to it.
Rabri kheer is ready, transfer it to a bowl and garnish with finely chopped cashews and almonds. This rabri kheer taste delicious. You can served it chilled or warm. Rabri kheer keeps good for up to 3 days.
Suggestions:
- After adding rice to the kheer, keep stirring it constantly to prevent it from browning at the base.
- You can add dry fruits as per your taste or adjust the quantity as desired.
