Makhana Kaju curry recipe

Makhana cashew curry is a scrumptious dish with rich gravy. This dish can be prepared for any party or whenever you feel like eating something really good.

Ingredients for Makhana Kaju curry

  • Lotus seeds - 1 cup
  • Cashews - 25
  • Oil - 1/2 cup (for frying cashews and lotus seeds)
For Gravy:

  • Tomato - 4 (250 grams)
  • Green chilly - 2
  • Cashews - 25 (soaked in water for an hour)
  • Green coriander - 2 to 3 tbsp (finely chopped)
  • Oil - 2 tbsp
  • Ginger paste - 1 tsp
  • Dry fenugreek leaves - 1 tsp
  • Asafoetida - 1 pinch
  • Cumin seeds - 1/2 tsp
  • Garam masala powder - 1/4 tsp
  • Turmeric powder - 1/4 tsp
  • Red chilly powder - 1/4 tsp
  • Coriander powder - 1 tsp
  • Salt - 1 tsp

How to make Phool Makhana Curry

Wash and cut tomatoes in big chunks. Remove stalk from green chilly and wash them thoroughly,. Place the tomatoes and green chilies in a mixture jar along with soaked cashews. Finely ground all the ingredients. 

Prepare masala:

Preheat a pan and place some oil to it. When oil is hot, add cumin seeds. After sauteing cumin seeds, add ginger paste, turmeric powder, dry fenugreek leaves and coriander powder. Saute the masala for a while. Now add grounded masala, red chilly powder and saute the masala for few more minutes on medium flame until oil starts separating from it. Meanwhile fry cashews and lotus seeds on the other flame. Take another wok and add some oil to heat. When oil is medium hot, place cashews and fry until they turn slightly brown in color. Add little lotus seeds at a time and fry them as well until they get slightly brow in color. Likewise fry all the makhana. 

Stir the masala at regular intervals. Oil has started separating from the masala, its ready. Add 1 cup water in the roasted masala, salt garam masala and some green coriander. Mix well. After gravy simmers once, add fried lotus seeds and cashews. Cover the sabzi and cook on low flame for 3 to 4 minutes so that cashews and lotus seeds absorb all spices. Makhana cashew curry is ready. Take out the sabzi in a bowl and garnish with some green coriander and cream. Serve this delicious makhana curry with chapatti, parantha, poori and rice and relish eating.
