Instead of making uttapam with dal-rice batter, try making it with semolina, which can be prepared instantly and easily. These can be packed in lunch for kids as well.

Ingredients for indian sooji uttapam
- Semolina – 1 cup
- Curd – ¾ cup
- Oil – 2 to 3 tbsp
- Green coriander – 2 tbsp (finely chopped)
- Tomato – 1 (finely chopped)
- Cabbage – ½ cup (finely chopped)
- Capsicum – ½ cup (finely chopped)
- Green chilly- 1 (finely chopped)
- Ginger – 1 inch piece (grated or finely chopped)
- Salt – 1/3 tsp or as per taste
- Red mustard seeds – ¼ tsp
How to make Rava Uttapam
Take out semolina in a big bowl and add curd into it. Now add water little by little and make a batter same as required for making pakoras.
Add salt, ginger, green chilly in the batter and keep aside for 10 minutes to make it puffy.
Take capsicum, cabbage and tomato in a separate bowl.
Make Uttapam:
Place a non stick tawa over flame. Spread 1 tsp oil over the tawa, evenly. Sprinkle some red mustard seeds over it. When it crackles, pour 2 tsp batter on the heated tawa and spread it evenly in round thick uttapam.
Spread the vegetables over it evenly with help of a spoon. Also, place some green coriander over it. Pour some oil all around and over the uttapam. Press the vegetables nicely with help of a spoon.
Cover and cook the uttapam until it gets brown at the bottom. Now flip the sides and roast from the other side as well on medium flame. Roast until vegetables are aptly cooked and brown spots appear over it. Take out the uttapam in a plate and likewise prepare all uttapam.
Serve steaming hot uttapam with coconut chutney, peanut chutney or green coriander chutney and relish eating.
