- Ingredients for Kaju Badam Poha Namkeen

  • Fat Poha(beaten rice) -  300 grams
  • Ground nuts - 300 grams(peeled)
  • Cashew nuts - 100 grams
  • Almonds - 100 grams
  • Raisins - 50 grams
  • Coconut - 50 grams
  • Oil  - to fry

Spices

  • Salt - less than 1 tsp
  • Black salt - 1/2 tsp
  • Black pepper - 20 to 25 ( 1/2 tsp powder)
  • Jeera(cumin seeds) - 1/2 tsp
  • Heeng(asafoetida) - 1 pinch
  • Amchur(mango) powder - 1/2 tsp
  • Coriander(dhaniya) powder - 1 tsp
  • Red chilly powder - less than 1/4 tsp

- How to make Kaju Badam Poha Namkeen

Keep Poha in a plate and clean it well. Also check the peeled ground nuts for any impurities. Break the stems of the raisins. Cut cashew nuts into 2 halves. Cut coconut into thin strips.

Pour oil in a frying pan(kadhai) to fry Poha. After oil is well heated put half of the Poha in it, lower the flame. After Poha becomes puffy, take it out on a plate, similarly fry the remaining Poha.

Put cashew nuts in the remaining oil, fry on a low flame till they turn light brown then take them out. Also fry the almonds on a low flame till they turn light brown then take them out. Similarly fry the ground nuts then take them out.

If there is any oil left over in the pan then take it out. On a lightly hot pan and on a low flame fry coconut till it becomes light brown then take it out.

Mix all these in a big plate.

Prepare the spices

Fry black pepper, Jeera, coriander and Heeng on a hot pan for some time. Mix these fried spices with black salt, plain salt, Amchur powder, red chilly powder and grind to make a fine powder.

Put all the mixed spices' powder in the Namkeen and mix properly.

Kaju Baddam Poha Namkeen is ready. After it cools off completely fill Namkeen in an air-tight container, take it out and eat whenever you desire.

Suggestion

If you already have (Chat Masala) prepared at hoe then do not make these spices. Put 2 1/2 tsp Chat Masala in the Namkeen and mix well. Delicious Kaju Badam Poha Namkeen is ready.
