Ulta Vada Pav Recipe Street Food of Nashik
Today we are going to make a special ulta vada pav of Nashik for breakfast. It is very easy to make and gets ready in a jiffy. It is crispy on the outside and soft and tangy inside. Its taste is very wonderful. So you too make ulta vada pav with this easy recipe and enjoy this delicious vada pav from Nashik with your family.
Ingredients for Ulta Vada Pav
Gram Flour - 2 cups (250 grams)
Salt - 1 tsp
Red Chilli - 1/2 tsp
Carom Seeds - 1/2 tsp
Oil - 1 tbsp
Mustard Seeds - 1/2 tsp
Ginger - 1 tsp, grated
Green Chilli - 2, finely chopped
Curry Leaves - 10-12, chopped
Boiled Potato - 3 (300 g)
Turmeric Powder - 1/4 tsp
Coriander Powder - 1 tsp
Red Chilli Powder - 1/2 tsp
Dry Mango Powder - 1/2 tsp
Garam Masala - 1/4 tsp
Salt - a little less than 1/2 tsp
Baking Soda - 1/8 tsp
Pav - Pav
Oil for frying
Process of making the Batter
Add water little by little to 2 cups of gram flour in a bowl and make a batter by eliminating the lumps. When the lumps are over, add water to it and make a thin batter. Then add 1 tsp of salt, 1/2 tsp of crushed red chilli and 1/2 tsp of carom seeds (crushed) and mix them well. After mixing well, cover the batter and keep it for 10-15 minutes.
Process of making the Stuffing
Put 1 tbsp of oil in a pan and heat it. Put 1/2 tsp of mustard seeds in hot oil and let it crackle. When it crackles, add 1 tsp of grated ginger and 2 finely chopped green chilies. Reduce the flame to low and fry them lightly.
After frying, add 10-12 chopped curry leaves and fry them lightly. Then break 3 boiled potatoes into it, 1/4 tsp of turmeric powder, 1 tsp of coriander powder, 1/2 tsp of red chilli powder, 1/2 tsp of dry mango powder, 1/4 tsp of garam masala and a little less than 1/4 tsp of salt.
Fry while mixing them, breaking the potatoes. Also, add 2-3 tbsp of water and fry them on medium flame. After roasting well, add some green coriander to it and mix it well. Then turn off the flame and take it out. In this way the potato stuffing will be ready.
Process of making Ulta Vada Pav
While stirring the batter, if it looks thick, then add some water to it and mix it well. Then add 1/8 tsp of baking soda to it and mix it well. Now cut a pav and make a hole on one side of it. Then press and make some space in it.
Then put some green chutney in it and apply it all around. Now put stuffing in it and fill it well till the top and make a layer of potatoes and set it by pressing. Similarly prepare all the Vada Pav. Then heat oil in a pan, the oil should be medium-high hot and the flame should be low-medium.
Now dip this Vada Pav in the gram flour batter and put it in hot oil. Let it fry from below, as well as pour some hot oil on top of it. Then fry it from all sides till it turns golden brown and take it out. Fry the rest in the same way.
In this way the special ulta vada pav of Nashik will be ready. Serve them with your favourite dip and enjoy their taste.
The oil should be medium-high hot while frying them.
