Ingredients for Matar Paneer Patties

For Dough

Potato - 6 (500 g)

Salt - 1 tsp

Black Pepper - ½ tsp

Sattu or Besan - 6 tbsp

Cornflour - 4 tbsp

Coriander Leaves - 1-2 tbsp

For Stuffing

Peas - 1 cup

Oil - 2 tbsp

Cumin Seeds - ½ tsp

Salt - ½ tsp

Ginger - 1 tsp, grated

Green Chilli - 2, finely chopped

Coriander Powder - 1 tsp

Salt - ¾ tsp

Red Chilli Powder - ½ tsp

Dry Mango Powder - ½ tsp

Garam Masala - ¼ tsp

Paneer - ¾ cup (100 grams)

Coriander Leaves - 1-2 tbsp

Process of making Stuffing

Put 1 cup of green peas in a mixer jar and grind them coarsely.  Heat 2 tbsp of oil in a pan.  Reduce the flame to low, add ½ tsp of cumin, 1 tsp of grated ginger, 2 finely chopped green chillies(seeds removed) and 1 tsp of coriander powder in the hot oil.  Roast them lightly, then add coarsely ground peas, ¾ tsp of salt, ½ tsp of crushed red chilli, ½ tsp of dry mango powder and ¼ tsp of garam masala.

Now fry it for 1-2 minutes on low-medium flame.  After frying, add ¾ cup of grated paneer and 1-2 tbsp of green coriander to it.  Turn off the flame after mixing them, the stuffing will be ready.

Process of making Dough

Boil 6 potatoes and grate them with a medium grater.  Put grated potatoes, 1 tsp of salt, ½ tsp of freshly crushed black peppers, 6 tbsp of sattu flour, 4 tbsp of cornflour and 1-2 tbsp of finely chopped coriander leaves in a bowl.  Make a dough by mixing them well.

Then take a little oil on your hand and break them into small pieces, as small or as big as you want to make patties.  In the same way, after making dough, take oil on hand and make as many balls of stuffing, as much as it is covered with dough.

Process of filling Patties

Take a piece of dough and shape it into a bowl with the help of oil.  Then keep the stuffing in the middle and close it by pressing.  Keep it in a plate after closing it and making it round well, in the same way fill some patties.

Process of frying Patties

Heat oil in a pan, oil should be medium hot and flame medium.  Put 3-4 patties in hot oil and fry till it becomes light brown.  When they turn light brown, turn them and fry them till they turn golden brown.  Remember, they have to be turned very carefully.  Fry all in the same way, matar paneer patties will be ready.

Process of making Patties in less oil

Fill the remaining dough pieces in the same way, then make a round shape by pressing lightly.  Fill all the remaining boxes in this way.  Put 2-3 tbsp of oil in a pan and heat it.  Put the patties in medium hot oil for frying.  Cook it for 4 minutes on medium flame, then turn it back for 4 minutes.  Fry them over and over till they turn golden brown in colour from both the sides.  In less oil, matar paneer patties will be ready.

Serve both types of patties with green coriander chutney and tomato sauce and enjoy their tangy taste.

Boil the potatoes well and grate them with a medium grater.

While filling the balls of patties, the stuffing has to be closed properly and round it.

The flame should be medium while frying and the oil should also be medium hot.
