Process of making dough
In a bowl add 1 cup of all purpose flour, ¼ cup of gram flour, ½ tsp of carom seeds (crushed in the palm), ⅓ tsp of salt and 2 tbsp of oil. Mix all well, then add water little by little and knead a hard dough like puri dough. After kneading, cover it and keep it for 20 minutes.
Process of making Pakwan
Mash the dough lightly and make small balls out of it. Make a peda by mashing a ball, then roll it thin like a puri. When rolling, make small holes in it with a forked spoon so that it does not swell while frying. Now prepare the rest by rolling it in the same way.
In the end, save two balls and make them round together, then make a peda and roll it thin like a puri. After rolling, make small holes in it with a fork, then cut out round shapes from a small bowl. In this way even small pakwan will be ready.
Process of frying Pakwan
Heat oil in a pan, the oil should be medium hot and the flame should also be medium. Put the pakwan in hot oil and fry it, it is to be fried on low-medium flame. Fry over and over till it turns golden brown in colour from both the sides. Take out and fry the rest in the same way, the pakwan will be ready after frying.
Process of making Aloo Masala
Mash 4 boiled potatoes well in a plate. Then add 1 finely chopped tomato (seeds removed), 2 finely chopped green chilies, 1 inch of grated ginger, ½ tsp of salt, ½ tsp of black salt, ½ tsp of crushed red chilli, ¼ tsp of dry mango powder, ½ tsp of roasted cumin powder and 1-2 tbsp of green coriander. Mix them well, potato masala will be ready.
Process of assembling Pakwan Chaat
Place a pakwan on a plate, put potato masala on it and make a plain layer. On this add a little curd, a little green chutney, a little sweet chutney, a little black salt, a little roasted cumin, a little green coriander and finely chopped sev. The pakwan chaat will be ready.
Keep the smaller pakwan on another plate. Similarly, put potato masala layer on it, then curd, green chutney, sweet chutney, black salt, roasted cumin, green coriander and sev. Small pakwan chaat will be ready. Serve them and enjoy their taste.
Suggestions
