Process of making Mango Murabba

Wash and peel 1 kg of mango.  Now cut them into any shape you want and put them in the bowl.  Boil water in the pan and put them in it and cook it.  Do not soften too much, just enough to cut comfortably with a knife.  When cooked, filter them and keep their water aside.  Now put the boiled mango in a big bowl, put 4 cups (800 grams) of sugar in it, cover it and keep it for 1 hour.

When the time is up, put mango and sugar in a steel pan and cook it on medium flame.  Remember, you have to keep running it once in a while.  Put 2-3 cinnamon sticks in it, along with 20-25 saffron threads in a bowl and mix a little water from the pan and keep it till it leaves the color.  Cook it till one wire is formed in the syrup.

When it comes to boil, add 4 crushed cardamom and mix it, then cook till a string comes while stirring.  After the syrup is made well, add saffron thread mixture and mix it, mango murabba will be ready.  Cool it and keep it for 4-5 hours and then eat it alone or with roti and enjoy its taste.

Process of making Mango Panna

Put 2 tbsp of sugar powder, 2-3 cubes of ice, mango juice, ¼ tsp of black salt and ¼ tsp of roasted cumin in the glass.  Mix them well and the mango panna will be ready.

Suggestions

Mango should not be boiled too much.

While making murabba, do not cook it for a long time.

If ever it seems too thin, then put it back in the pan and cook it and make it thick.
