Puff Patties Recipe from scratch

Puff pastry is very much liked by children, as well as it is a favorite snack of adults too.  But making crispy pastries with layers like the ones in the market becomes a very difficult task.  Ending this difficulty, today we are going to make puff pastry.  We will make this with all the methods of the beginning, that is, how its sheet is made and how many layers come in it.  You will understand all this easily with this method.


Ingredients for Puff Patties


For dough


Refined flour - 1 cup (165 grams)

Salt - ½ tsp

Lemon Juice - 1 tsp

Butter - 100 grams


For stuffing


Oil - 1 tbsp

Peas - ½ cup

Turmeric Powder - ¼ tsp

Cumin Powder - ½ tsp

Ginger - 1 tsp, grated

Potato - 2, boiled

Salt - ½ tsp

Kashmiri Red Chilli Powder - ½ tsp

Dry Mango Powder - ½ tsp

Coriander Leaves - 1-2 tbsp

Garam Masala - ¼ tsp


Process of making dough


Put 1 cup (165 grams) of all purpose flour, ½ tsp of salt, 1 tsp of lemon juice and 15 grams of  butter in a bowl.  Mix all these well and knead a soft dough by adding little by little water.  After kneading, cover it and keep it for 20 minutes.


Process of making sheet for Patties


When the time is up, mash the dough well.  Now roll it thin lengthwise.  After boiling, add the remaining 85 grams of butter in and press it lightly by keeping it in the middle.  Spread butter on the one-third part in the middle and cover it from the bottom, then fold it from above as well.  In this way three layers will be made, press it well from the edge and stick it.


Now roll it back lengthwise by applying dry flour on both sides.  It has to be rolled with light hands, if butter comes out from anywhere, then roll it by applying dry flour.  After rolling it long, fold it back into three parts making a layer.  Take a polythene sheet and wrap it well and keep it in the fridge for half an hour.


After the time is up, take it out and roll it lengthwise by wrapping it in the dough again.  Then fold it back into three parts, wrap it in foil and keep it in the fridge for half an hour.  When the time is up, roll it back in the same way, fold it, wrap it in foil and keep it in the fridge for half an hour.  After the time is over, put it back in the fridge by the same method. To make a pastry sheet, do this method 4 times and keep the dough in the fridge, in this way the sheet will be ready.


Process of making Masala Aloo


Put 1 tbsp of oil in a pan and heat it.  Add ½ cup of peas and a little water in hot oil, cover them and cook for 2 minutes.  When the time is up, add ¼ tsp of turmeric powder, ½ tsp of cumin powder, 1 tsp of grated ginger, 2 boiled potatoes (to be mashed well), ½ tsp of salt, 1 tsp of coriander powder, ½ tsp of kashmiri red chilli powder, ½ tsp of amchur powder, ¼ tsp of garam masala and 1-2 tbsp of green coriander.


Now fry them for 2-3 minutes while mixing them well and mashing the potatoes.  When roasted, masala potatoes will be ready.  Take them out and cool them.


Process of filling Puff Patties


Take out the sheet from the fridge and roll it into thin squares when it becomes soft.  After rolling, cut its corners and make it even.  Now divide it into three parts, then fold the triangle and cut all the squares while measuring.  After cutting all the squares, roll them lightly and make them thin, remember not to make it too thin.


Then place the stuffing in it giving it a triangular shape.  Fold it by applying water on the corners with your finger.  Press and stick the corners well, in this way the puff pastry will be filled and ready.  Prepare the rest by filling in the same way.


Process of baking Puff Patties


Put the puff pastry in a baking tray and apply full cream milk on the pastry with a little brush.  Now preheat the oven to 180 degree centigrade for 8 minutes.  When the time is up, put the tray in the oven and bake it for 15 minutes.  After the time is up, take them out and see if they will not be cooked completely, then bake them again at 180 degree centigrade for 10 more minutes.


When the time is up, they will be baked, but won’t be crunchy.  So now bake them back at 140 degree centigrade for 10 minutes.  When the time is up, puff pastries will be ready, serve them with tomato sauce and enjoy their taste.




Each oven has a different time, so after first baking the pastry at 180 degree centigrade for 15 minutes, check it and increase the time further.  Then crisp it for 10 minutes at 140 degree centigrade.

You can keep them in the fridge and eat them for 2 days.
