How to prepare Matar Muthiya?
To prepare matar muthiya, coarsely grind 3/4 cup of green peas and take them out in a bowl. Add 1/2 cup wheat flour, 1/2 cup of besan, and 1/2 cup finely chopped Methi to the peas.
Add 1 tsp of salt, 1/2 tsp of turmeric powder, 1/2 tsp of coriander powder, 2-finely chopped green chilies, 1/2 tsp of crushed red chili powder, and 1 tsp of grated ginger to the green peas.
Add 1/2 tsp of cumin seeds, 1/2 tsp of carom seeds, 1/4 cup of curd, and less than 1/4 tsp of baking soda, and mix everything. Pour water gradually and prepare a soft dough.
Boil 2-3 cups of water in a cooking vessel and grease a sieve with oil. Apply a little oil to your hand, divide the dough into 2-portions, and give the dough portions a log-shape.
Roll the dough logs into 1 or 1/4 inches in diameter and keep them on the greased sieve at a distance. Place the sieve over the steamer and steam for 2 minutes over high heat.
After 2 minutes, turn the flame medium and steam the muthiya for 20 minutes.
Check the muthiya after 20 minutes by inserting a knife inside it. If the knife comes out clean, that means green peas muthiya are ready. Take the muthiya out and allow them to cool for 5 minutes.
After 5 minutes, cut matar muthiya into 1/2 inch pieces and serve with chutney. If you want to make muthiya tastier, then prepare Tadka and crisp them in it.
Heat 3-4 tsp of oil in the pan. Add 1 tsp of sesame seeds, 1/2 tsp of cumin seeds, less than 1/4 tsp of salt, less than 1/4 tsp of red chili powder to the hot oil, and mix well.
Add muthiyas to the pan and crispy them from both sides. They will take 1 to 1.5 minutes to crisp. Green peas muthiya is ready to be served.
Blend 1 cup green coriander (chopped along with stalks), 2-green chilies, 1-inch ginger baton, 1-pinch hing, 1/2 tsp cumin seeds, 1/2 tsp of black salt, 1/2 tsp of salt, 3/4 tsp of amchur, and some water in a blender. Green coriander chutney is ready.
Enjoy spongy, soft, and delicious matar muthiya with tasty green coriander chutney or tomato sauce.
