Maida Basan Mathri is a unique recipe of Mathri which is easier to make. It can be made instantly by utilizing the lesser quantity of ingredients which are easily available.
Ingredients for Mathri Maida Besan Chakri
- Refined flour - 1 cup (125 grams)
- Chickpea flour - 1 cup (100 grams)
- Oil - 3 tbsp
- Red chilli flakes - ½ tsp
- Turmeric powder - ½ tsp
- Carom seeds - 1 tsp
- Asafoetida - ½ pinch
- Salt - ¾ tsp
- Dry fenugreek - 1 tbsp
- Refined oil - 2 tbsp
- Oil - for frying
How to make Mathri Maida Besan Chakri
For the refined flour dough
Take a cup of refined flour in a bowl, add a ⅓ teaspoon of salt, a ½ teaspoon of salt and carom seeds after crushing to it. Add 2 tablespoons of oil to it and mix all the ingredients well. ‘
Add some water to it in the intervals to knead the stiffer dough. Less than 1/4th cup of water was utilized to knead the required quantity of dough. After kneading the dough, cover and keep it aside for 20 minutes.
For the chickpea flour dough
Take a cup of chickpea flour in a bowl, add a ½ teaspoon of salt, a ½ teaspoon of carom seeds, coarsely ground red chilli, turmeric powder, a tablespoon of dry fenugreek leaves and mustard oil to it.
Add a ½ pinch of asafoetida to it and mix well. Add some water to it in the intervals and knead the stiff dough. After kneading the dough, cover and keep it aside for 20 minutes to set.
For assembling Mathri Maida Besan Chakri
Lift a dough lump of refined flour dough, roll and flatten it into the diameter of 7 to 8 inches. Flatten the chickpea flour dough likewise. Place chickpea flour Poori over the Poori of refined flour.
Flatten both of them together, roll them and apply some water on its corners to stick it. Cut in into the thicker sized pieces of 0.5 to 0.75 cm. Flatten every piece individually using a rolling pin.
For frying the Mathris
Preheat oil in a wok, the lesser heated oil is required to fry the Mathris. Keep the flame from low to medium for frying these. Once Mathris starts floating on the surface, flip them and fry until golden brown.
After frying the Mathris, drain them out using a ladle. Fry all the Mataris likewise and increase the flame after the first round. 11 to 12 minutes was consumed to fry a single round of Matari. The Matari of chickpea flour and refined flour is ready to be served. Store them in an airtight container after cooling it and consume for a month.
