Caramel Kheer Recipe | Caramel payasam recipe

Caramel dessert is a unique recipe of dessert which is scrumptious to eat. It is a dessert which is made up of caramelized sugar and basic Kheer. It is scrumptious to eat and has a mouth-drooling taste.

Ingredients for caramel Kheer

  • Milk (full cream) - 1 litre
  • Rice (soaked) - ¼ cup (50 grams)
  • Sugar - ½ cup (100 grams)
  • Raisins - 1 to 2 tbsp 
  • Cashews - 10 to 12 
  • Cardamoms - 4 
  • Pistachios (chopped) - 1 tsp 
  • Ghee - 1 tbsp 

How to make caramel Kheer

Take a ¼ cup of rice and soak it in water for half an hour. Take a litre of milk in a vessel and boil it on high flame. Keep on stirring it once or twice in between of the process. Take 10 to 12 cashews and chop them. 

After chopping them, take 4 green cardamoms, peel them and grind them coarsely ground in a mortar for the powder. Add a ¼ cup of soaked rice to the boiling milk and stir it again. Cook the dessert until it reaches to its thicker consistency and rice melts. The kheer will be cooked after an hour. 

Preheat a pan, add a tablespoon of clarified butter to it and melt it. Add the chopped cashews to it and roast until its colour changes. After roasting the cashews, add 1 to 2 tablespoons of raisins to it and roast for a while.

Preheat a pan, add a ½ cup of sugar to it and cook on medium to high flame. Cook while stirring it until the sugar melts and changes its colour. Switch off the flame when the sugar becomes brown and melts. 

Mix some water to it and wait until its temperature decreases. Switch on the flame, add it to the Kheer and cook while stirring it. Add the roasted dry fruits, cardamom powder to the dessert and cook for 1 to 2 minutes. 

Caramel Kheer is ready to be served. Garnish it with some chopped pistachios and serve it hot or cold as per your desire.
