Maharastrian Pancake Amboli Recipe

Amboli is a traditional Maharashtrian recipe, it is almost similar to the Dosa but, slightly different in taste.
Ingredients for Amboli
- Soaked rice - 1 cup
- Soaked Urad Dal - ½ cup
- Baking soda - ¼ tsp
- Salt - ¾ tsp
- Oil - 1 to 2 tbsp
How to make Amboli
For the batter
Take a cup of rice, wash it, soak it for 3 to 4 hours and after soaking it, grind it finely in the grinder jar. After grinding it, pour it in a separate bowl. Take a cup of Urad Dal, wash and soak it in the water for 3 to 4 hours.
After 4 hours, separate the extra water from it. After separating the water, add it in the grinder jar followed by 1 to 2 tablespoons of water to it. Grind it finely too and pour it in the bowl along with the paste of rice.
Stir to blend well and add a ¼ teaspoon of baking soda to it. The batter is ready to be fermented, keep it aside to ferment for 10 to 12 hours. After fermenting it, stir it slowly and add some water for rectifying its consistency.
Add a ¾ teaspoon of salt to it and stir well. Preheat a griddle and grease it with oil. Spread a tablespoon of batter evenly in the circular motion over it and let it cook for a while. Spread some oil over and around it.
Cover and cook until it is dark from the bottom for 3 to 4 minutes on medium flame. After 3 minutes, flip it and cook until it becomes brown from the other side too. The Amboli has cooked and it has become slightly dark too. Cook all the Ambolis likewise. The Ambolis are ready to be served.
You can cook 8 to 10 Ambolis from the given quantity of batter. You can serve it along with peanut dip, coconut dip and green coriander dip.
Suggestion
You can use fenugreek seeds instead of baking soda to ferment the batter.
