Instant kharvas | Soft Kharvas In Pressure Cooker
Kharvas is the traditional Maharashtrian recipe which is made up of the cholesterol milk.
Ingredients of kharvas
- Full cream milk- 1 cup (250 grams)
- Hung curd- 1 cup (250 grams)
- Condensed Milk- 1 cup (250 grams)
- Cornflour- 2 tbsp
- Nutmeg- less than ¼ tsp
- Green Cardamoms- ¼ Tsp
- Pistachios- 6 to 7 (slices)
- Saffron- 6 to 7 (strands) (optional)
How to make the kharvas
For hung curd
Spread a cotton cloth on a bowl, place it over a bowl, pour 2 cups of curd on it and squeeze to remove the water from the curd. The leftover thick curd on the cloth is called hung curd.
For the kharvas
Add hung curd in the mixer jar along with cornflour and blend them. Add full cream milk, condensed milk, blend them to make a smooth mixture and blend until lumps disapper.
Take a vessel which is plain from the bottom and its walls are higher. Add the mixture to it.
Garnish the mixture with ¼ tsp of green cardamoms powder, ¼ tsp of grated nutmegs and finely chopped pistachios.
Preheat 2 cups of water in a pressure cooker until the steam appears.
Place a stand in the cooker and place vessel of the mixture over it once the water boils.
Close lid of the pressure cooker and do not place the whistle over it. Cook the kharvas on the medium-high or medium flame for 30 minutes.
Check it after 30 minutes by inserting the knife in it. If the knife is clear then the kharvas is cooked, keep it aside to cook.
Cool it beneath the fan until it reaches its normal temperature and later on, keep it in the refrigerator to set for an hour.
Cut it into the pieces, separate from the corners once it has set. Serve it after removing it from the vessel in the desired shape.
You can also use the mawa or the sugar powder instead of the condensed milk.
If you are adding the mawa, take 1/2 cup of mawa and 1/2 cup of the sugar powder
If you are adding the milk powder then take 1/2 cup of sugar powder and milk powder.
