Namkeen Gatta Snacks । Tea time snack Besan Namkeen

It is a namkeen which does not require the machine while preparing and it is a bite-size namkeen.
Ingredients for gatta snacks
- Chickpea flour - 2 cups brimmed ( 250 gms)
- Dry Fenugreek Leaves - 1 tbsp
- Cumin seeds - 1/2 tsp
- Carom seeds - 1/2 tsp
- Coriander - 1 tsp ( coarsely grounded )
- Turmeric powder - 1/4 sp
- Red chilli powder - 1/4 tsp
- Black pepper & cloves - 1/2 tsp & 5 coarse powder
- Asafoetida - 1 pinch
- Green chili - 2 (finely chopped )
- Baking soda - 1/4 tsp
- Oil - 2 tbsp
- Salt 1 tsp ( or to taste )
- Oil - for frying
How to make Gatta Snacks
Take 2 cup of the chickpea flour in a bowl, add ½ tsp of the cumin seeds, add ½ tsp of the crushed carom seeds, 1 tbsp of the crushed dry fenugreek leaves, add ½ tsp of coarse powder of black pepper and 5 cloves, add 1 tsp of the coarsely ground coriander, add ¼ tsp of red chilli powder, add 2 finely chopped green chillies, add ¼ tsp of turmeric powder, add 1 pinch of asafoetida, add ¼ tsp of baking soda, add 1 tsp of salt, add 2 tbsp of oil and mix all the ingredients properly.
To prepare the dough
Add ½ cup of water in intervals and knead the stiff dough as prepared for the gatte. Apply the oil on the palms and make them greasy then knead the smooth dough. Cover and keep aside the dough for 10 minutes.
To prepare the snacks
Divide the smaller sized portions of the dough and apply some oil on the board. Take one portion of the dough and roll it between your palms. Make a vertical roll of the dough as prepared for the gatta by rolling it on the board using your palms. Prepare the roll of ½ inch thick diameter and cut the roll in smaller sized pieces.
To fry the gatta snacks
Heat the oil moderately to fry the snacks. Add one piece of the dough in the heated oil to check and if there are bubbles in the oil then the oil is perfectly heated. Add the gattas in the wok to fry according to its capacity and turn the flame to medium.
Fry them on the medium flame for 5 minutes and they appear crunchy. Turn the flame to high and fry them until they are golden brown in colour. Remove them from the wok using a ladle once they are golden brown in colour. Place them in the plate and fry another round of the gattas by the same way. It takes 7 to 8 minutes to fry the one round of the gattas.
The tasty and crispy gatta snacks is ready to be served. You can serve it as the snacks with the tea. Store them in an airtight container once they cool down and consume them for the period of 1 to 2 months.
Suggestions
The prepared dough should not be thicker or smoother.
You can use the finely chopped coriander rather than the crushed dry fenugreek leaves.
