Mawa malpua is an amazing sweet dish to make for any party, occasion or the guests. It is perfect to serve as a snack or as a sweet dish.
Ingredients for Mawa Malpua Recipe
- Refined flour- 1 cup (100 gms)
- Mawa- 1 cup (200 gms)
- Sugar- 1 cup (250 gms)
- Boiled milk- 2 cup
- Cardamom- 4
- Pistachios- 10 to 12
- Almonds- 5 to 6
- Ghee- Quantity which is required to fry
How to make Mawa Malpua Recipe
For the Batter
Grate the mawa and mix it with the milk. For the mixing process add the mawa and milk in the jar of a mixer. Use the 1.5 cup of milk to make the batter for the malpua.
Take out the batter in a vessel and keep it aside to set for 15-20 minutes.
For the Sugar Syrup
Add the sugar and the water in a vessel and cook them until the sugar dissolves in the water.
Chop the almonds and pistachios in small pieces and grind the cardamoms.
To check the sugar syrup add the 1-2 drop of sugar syrup in a mini bowl. Once, it cools down. Check it’s stickiness by sticking it between your fingers. The sugar syrup which has the consistency of a thread is not the right choice for the sugar syrup of the malpuas.
After, the sugar dissolves in the water cook the syrup for more 5 minutes. Remove the sugar syrup from the vessel and pour it in a bowl to cool down quickly. Add the cardamom powder in the sugar syrup and mix it well.
How to fry mawa malpua?
After the 20 minutes batter is ready. For the frying process heat the ghee in a pan. Add a pinch of malpua in the batter to check its temperature. Once, the batter starts floating on the surface of the ghee it indicates that oil is enough hot to fry the malpuas. To fry the malpuas, moderately hot ghee is required. Start the process of frying by taking some batter in the spatula and pouring it into the pan. To fry the malpuas from the top pour the ghee on them by picking up the ghee from the pan using the spatula. Flip the malpuas by using the ladle to fry it from the other side properly.
Remove the malpuas from the pan once they are golden brown from both the sides. While removing the malpua from the ghee after they are fried squeeze it between the two ladles so that the extra ghee gets extracted from the malpuas and move back in the pan. Place them on a plate after extracting the ghee and fry all the malpuas in the same way. It acquires 5-6 minutes to fry the one time of malpuas.
Dip the malpuas in the sugar syrup and remove them from the sugar syrup after 3-4 minutes. Garnish them with the chopped dry fruits and serve. The delicious and mawa filled malpuas are ready.
Suggestions
Make sure that the batter does not consist of lumps in it. Beat the batter until it’s texture is smooth.
In case the malpuas start expanding their size it indicates that the batter is too thick. For removing that thickness from the batter add some warm milk in it and mix them properly.
In case the malpuas corners start tearing that indicates that the batter is too thin, add refined flour in and mix properly. It will provide you with the required texture of the batter.
You can break the mawa also.
Do not pour the whole milk directly in the jar otherwise, lumps will be formed in the batter. Add the milk slowly and in the small portions in it.
Fry the malpuas in the moderately heated ghee and keep the flame medium. In case malpuas acquires the longer time to get fried, increase the flame in that case.
