Ingredients for Chana Dal Barfi :
- Soaked Chana Dal - 1 cup ( 200 gms )
- Milk - 2 cups
- Sugar - 1 cup ( 200 gms)
- Ghee - 1/2 cup ( 100 gms)
- Cashew - 20
- Almonds - 20
- Pistachios - 1 tbsp
- Green Cardamom - 6 to 7
How to make Chana Dal barfi-
Clean chana dal, soak in lukewarm water for 2 hours. Once soaked well, put dal in sieve, drain extra water.Keep the dal in sieve for 5 minutes. Spread dal over cloth and wipe it.
Cut dry fruits such as cashews in 6 to 7 pieces, almonds and pistachios cut into thin shavings. Peel and coarsely grind the cardamom as well.
Put ghee in a pan, let it melt. Put the dal in the ghee.Stir and roast the dal well until crispy. Keep the flame high. Once crispy,turn off flame. Take out the dal in a plate, let it cool. It took 12 minutes to roast the dal. Take out the leftover ghee in a separate bowl.
Once cool grind dal in a jar.Once grinded take out in a bowl, it should be of the same consistency as that of semolina.
Make Sugar syrup, Heat pan, put sugar in it , then pour milk. Cook until sugar dissolves, add the grinded dal flour in milk.Keep flame medium. Stir and cook it,till it reaches the consistency of barfi.Pour the ghee from the wok and leftover ghee in it too. Mix well. Reduce flame.
Once dense , add dry fruits shavings and cardamom powder. Mix well. To set turn off flame.
Grease plate with ghee. Put the mix in it. Press well. Put dry fruits and press well. Keep to cool off. Once set, mark into pieces. Heat the base of plate for 10 seconds then take out.
Sumptuous Chana Dal Barfi is ready to be relished on any special or festive occassion. If kept in fridge it keeps good for 10 to 12 days.
Suggestions:
- Press or eat and check the dal if it is fried well or not.
- if the dal is crispy it crackles.
- if you wish to use less ghee then do not add leftover ghee at the end in the sugar syrup.
- Make sure you check the dal if it is crunchy.
- When you add powder to the sugar syrup make sure you stir it continuously.
