Candied Watermelon Rind Recipe

Usually watermelon rind and mellow is used for making sabzi and jam, but murabba prepared with it also taste delicious and is really smoothing. This murabba can be added to fruit cream, ice cream, kulfi etc.

Ingredients for Candied Watermelon Rind

  • Watermelon rind -  taken from 1.5 k.g watermelon
  • Sugar - 1 cup (200 grams)
  • Green cardamom - 4 (peel and make powder)
  • Nutmeg powder - 1 to 2 pinch

How to make Watermelon Rind Candy

Peel off the rind from watermelon. Cut off the dark green portion and likewise peel all rind. Now cut them into 1-1 inch chunks. 

Blanch the melon rinds. Take enough water in a vessel so that the rinds drenched in it completely and place it over flame for heating. When water starts boiling, place the chunks into it, cover and cook for 5 minutes. Turn off the flame and take out the chunks from water. 

Place all the blanched melon chunks in a vessel, add sugar to them, cover and keep aside for 2 hours. Sugar dissolves with the juice of melon chunks/ Now place these chunks over flame and cook with sugar on low flame. Add cardamom powder and nutmeg powder. Cook until sugar gets thicker. 


Check the Sugar Syrup:

Take 1 to 2 drops of sugar syrup in a plate and allow it to cool. Take this syrup between your thumb and forefinger. See if it sticks and forms a single thread. Sugar syrup is now ready. If there is no formation of thread in the syrup, then cook the murrabba for few more minutes. 

Keep the murrabba as it in sugar syrup and stir once in a day with help of a spoon. After 2 to 3 days check the sugar syrup. If the syrup appears thin, then cook the murrabba for more minutes until the syrup gets dense. Murabba with watermelon rind is ready. 

If you wish to make the candy, then strain the excess syrup and place the watermelon chunks separately in a sieve. Within 8 to 10 hours, they get dry and the watermelon rind candy is ready. 

Suggestion:

  • For giving a flavor to murabba, we have added cardamom powder and nutmeg powder. But you can also use cinnamon, mace (javitri), saffron or vanilla essence as per your taste and preference.
