Fresh green curry leaves are put while cooking lentils and curries to give them a good taste and fragrance. You can also make a powder of these curry leaves.
Curry Powder is added to a curry, rice or dal then you will relish your food much more. So let us prepare Curry Powder.
- Curry Powder Ingredients
- Curry leaves - 1 cup
- Oil - 2 tsp
- Chana Dal - 2 tbsp
- Red Chillies - 2 to 3
- Black pepper - 10
- Rie seeds - 1/2 tsp
- Jeera(cumin seeds) - 1 tsp
- Methi seeds - 1/2 tsp
- Heeng(asafoetida) - 1 pinch
- Amchur(mango) powder - 2 tsp
- Salt - 2 tsp
- How to Make Curry Powder
Wash then dry fresh curry leaves. Pour 1 tbsp oil in a frying pan(kadhai) and heat. Put in the curry leaves and fry till they turn crispy, take them out and keep on a plate.
Pour the remaining 1 tsp oil then put Rie seeds and Jeer. After Rie, Jeera are roasted add Methi seeds, Chana Dal and black pepper. Fry till Dal turns brown, turn off the gas and let the spices cool off.
Put red chillies, Amchur powder and salt in the fried spices and mix, now put these spices in a mixer to make a fine powder.
Fill Curry Powder in an air-tight container. Cook curry leaves with rice, Idli, Dosa , Uttapam and enjoy delicious food with a good fragrance for a month.
