Process of making Rice Kheer

Wash and soak 2 tbsp of rice in water and keep it for 20-25 minutes.  Wet the cooker with water, add 1/2 litre of milk and cook it on high flame till it boils.  Meanwhile, crush 4 small cardamoms, remove the peel and crush them coarsely.  When the milk starts to boil, reduce the flame to low and put the soaked rice in it after removing the water.

Then add 1 tbsp of chopped almonds, 1 tbsp of chopped cashew nuts, 1 tbsp of chopped coconut, 1 tbsp of chironji, 1 tbsp of raisins and coarsely ground cardamom.  After stirring them, add 3 tsp of cream and mix it.  Now close the cooker and cook on high flame till one whistle.  As soon as the whistle starts, reduce the flame to low and cook for 5 minutes.

Then turn off the flame and let the cooker cool down.  When the cooker cools down, open it and put 1/4 cup of sugar in it.  Light the flame and cook it on low flame till the sugar dissolves completely.  After the sugar dissolves, turn off the flame and let it cool down.  In this way rice kheer will be ready, serve it and enjoy its taste.
