Garadu is very beneficial for health, it is similar to jimikand but its nutritious elements are more than that. It should be eaten at least twice a year, as well as it gives strength to the body to fight many diseases. Today we will make Garadu ki Chatpati Chaat, it is very easy to make. So you too make this nutritious chaat and enjoy its taste.
Ingredients for Garadu Chaat
Garadu/Tapioca - 500 grams
Salt - 1 tsp
Oil for Frying
For Garadu Chaat Masala
Cumin Seeds - 1 tsp
Coriander Seeds - 1 tsp
Fennel Seeds - 1 tsp
Black Pepper - ½ tsp
Cinnamon - 1 inch
Cloves - 4
Black Cardamom - 2
Asafoetida - 1 pinch
Turmeric Powder - ½ tsp
Salt - 1 tsp
Black Salt - 1 tsp
Sugar - 1 tsp
Red Chilli Powder - 1.5 tsp
Ginger Powder - ½ tsp
Lemon - juice of ½ lemon
Process of boiling Garadu
Wash and dry 3 pieces of 500 grams thoroughly. After applying oil in your hand, peel them and cut them into thick pieces of about ½ inch. In the cooker add chopped garadu, a little more than 1 cup of water and 1 tsp of salt and mix it. Close the cooker and cook it on high flame till one whistle, then turn off the gas and let the pressure of the cooker come out.
Process of making Garadu Masala
Heat the pan a little. When hot, then add 1 tsp of cumin, 1 tsp of whole coriander and 1 tsp of fennel and fry it for 1 minute. After frying, add ½ tsp of black pepper, 1 inch cinnamon, 4 cloves and 2 big cardamoms (peeled and granulated). Roast them for half a minute and turn off the flame. Then put 1 pinch asafetida in it and cool it by stirring it well.
When cool, put roasted spices, ½ tsp turmeric, 1 tsp of salt, 1 tsp of black salt, 1 tsp of sugar, 1.5 tsp of kashmiri red chilli and ½ tsp of ginger powder in a mixer jar. Grind them finely, homemade Garadu masala will be ready.
Process of frying Garadu
After the pressure of the cooker is released, filter the garadu and wash it once again. Then take them out and keep them separately and cool them. When cool, cut them into small pieces. Now heat oil in a pan, the oil should be medium-high and the flame should be medium-high. Put some garadu pieces in hot oil and fry them. Fry them while stirring it a little at a time till it turns golden brown from all sides. Then take it out and fry the rest in the same way, Garadu will be ready after frying.
Process of making Garadu Chaat
Put the fried garadu, 2-3 tbsp of garadu masala and the juice of half a lemon in the bowl. Mix them well, Garadu chaat will be ready. Serve them and enjoy their taste.
Suggestions
The remaining garadu masala can be eaten by sprinkling it on chaat or salad.
Garadu has to be boiled in the cooker till one whistle comes.
For frying garadu, the oil should be medium-high and the flame should also be medium-high. When they become crunchy, turn up the flame and fry them till they become golden brown.
