Put the chopped potatoes in hot oil and fry them on high flame till they turn golden brown, while stirring them little by little. When it turns golden brown, cut the potatoes and see, if they start cutting, then the potatoes will be ready after roasting. Take them out.
Process of making Aloo Matar
In the same pan heat the remaining oil (if it is 2 tbsp, then take out a little). Reduce the flame to low and put ½ tsp of cumin, ⅓ tsp of turmeric, 1 tsp of coriander powder and 1 tbsp of dry fenugreek (crush it and remove the stalk) in the hot oil. Fry them lightly, then add tomato-green chilli-ginger (2 tomatoes, 1 green chilli and ½ inch ginger) paste to it.
Add 1 tbsp of kashmiri red chilli and fry the spices while stirring it a little at a time till it leaves the oil. After the spices are lightly roasted, add 1 cup of green peas to it, then cover and cook for 2 minutes. When the peas are cooked and the spices leave the oil, add ¼ cup of malai to it. Mix it well and fry the spices while stirring for a while till they leave the oil.
After leaving the oil, the masala will be ready after roasting. Add roasted potatoes, 1 tsp of salt and water as per your choice and mix it well. Then cover it and cook for 3-4 minutes. When the time is up, add 2 tsp of green coriander and 1 maggi masala-e-magic sachet and mix it well. Aloo Matar Malai Sabzi will be ready. Serve it with roti, paratha, naan or rice and enjoy the taste.
