How to make Paneer Changezi - A special Delhi Recipe

Giving a different flavour to Paneer, today we are going to make Paneer Changezi.  Many vegetables are made from paneer, but we will make it in a different way with different spices.  It will be very tasty to eat and will be ready in very less time.  So you too make paneer changezi with this easy method and enjoy its taste.


Ingredients for Paneer Changezi


For Marinating


Paneer - 300 grams

Salt - ½ tsp

Ginger - ½ tsp, grated

Black Pepper - ¼ tsp, crushed

Chat Masala - 1 tsp

Turmeric Powder - ¼ tsp

Curd - 2 tbsp

Chickpea Flour - 2 tbsp

Oil - 2-3 tbsp


For Gravy


Oil - 2 tbsp

Bay Leaf - 1

Cinnamon - 1 inch

Cloves - 3

Black Pepper - 6-7

Red Chilli - 2

Cardamom - 1, crushed

Black Cardamom - 1, peeled

Tomato - 2 (250 g)

Ginger - ½ inch

Cumin Powder - ½ tsp

Coriander Powder - 1.5 tsp

Turmeric Powder - ¼ tsp

Red Chilli Powder - 1.5 tsp

Dry Fenugreek Leaves - 1 tbsp

Curd - ¼ cup

Fresh Cream - ¼ cup

Garam Masala - ¼ tsp (optional)

Salt - ½ tsp

Coriander - 1-2 tsp


Process of Marinating Paneer


Cut large pieces of 300 grams of paneer and marinate them.  Put them in a bowl and add ½ tsp of salt, ½ tsp of grated ginger, ¼ tsp of crushed black pepper, 1 tsp of chaat masala, ¼ tsp of turmeric, 2 tbsp of curd and 2 tbsp of gram flour.


Mix them well so that the spices are coated on each piece.  Now leave them for half an hour so that all the spices get absorbed inside it.


Process of roasting Paneer Pieces


Heat the pan, add 2-3 tbsp of oil to it and heat it.  Put paneer pieces in hot oil for frying.  Fry them on low-medium flame until they turn golden brown from all sides.  When they turn golden brown, take them out and fry the rest in the same way.


Process of making Gravy


Heat 2 tbsp of oil in a pan.  Put 1 bay leaf, 1 inch of cinnamon, 3 cloves, 6-7 black peppers, 2 whole red chilies, 1 cardamom (crushed) and 1 big cardamom (peeled and granulated) in hot oil.  After frying them lightly, add tomato-ginger (1 tomato and ½ inch ginger) paste and stir it once.


Then add ½ tsp of cumin powder, 1.5 tsp of coriander powder, ¼ tsp of turmeric, 1.5 tsp of kashmiri red chilli and 1 tbsp of dry fenugreek (crushing and removing the stem).  Fry them while stirring for a while till the oil separates from the spices.


After the oil separates from the spices, reduce the flame to low and add ¼ cup of fresh curd and fry it till it boils while stirring continuously.  After the oil is released from the spices, add ¼ cup of home-made cream and fry it while stirring continuously till the oil separates.


When the oil separates, add ½ cup of water, ¼ tsp of garam masala, ½ tsp of salt and some green coriander.  Mix them and add the pieces of cheese to it and mix.  Now cover them and cook on low flame for 2-3 minutes.  When the time is up, Paneer Changezi will be ready.  Serve it with roti, naan or rice and enjoy its taste.




Marinate the paneer and keep it in the fridge.

Fry the pieces of paneer till they turn golden brown from all sides.
