Ingredients for Hummus Falafel

For Hummus

Kabuli Chana - 1 Cup (200 gms)

Sesame Seeds - ¼ Cup

Salt - ¾ tsp

Lemon - 1 small

Olive Oil - 3 tbsp

Curd - 1

For Falafel

Coriander - ½ cup

Cloves - 3

Black Pepper - 6

Cumin Seeds - ½ tsp

Coriander Powder - 1 tsp

Ginger - ½ inch

Green Chilli - 2

Red Chilli - ¼ tsp, coarsely ground

Salt - ¼ tsp

Process of making Hummus

1 cup of chickpeas soaked overnight would have swelled to 3 cups.  After taking out their water, take 1 cup of gram from it and put it in the cooker, as well as add a cup of water to it.  Now boil it on high flame till one whistle comes.  After the whistle, reduce the flame to low and cook it on medium flame for 6-7 minutes.

When the time is up, put the cooker on the side and put ¼ cup of white sesame seeds in a pan and fry them till they change color.  After roasting, take them out on a plate.  Now take out the gram from the cooker and separate its water.

Grind boiled gram, roasted white sesame seeds, ¾ tsp of salt, juice of 1 lemon and 2 tbsp of olive oil in a mixer jar.  Now because all the dry ingredients have been mixed in the mixture, to make it thin, add 1 tbsp of olive oil and 2 tbsp of thick curd and grind it back, hummus will be ready.

Process of making dough for Falafel

Leftover chickpeas, 2 green chillies, ½ inch of ginger, ½ tsp of red chilli, 1 tsp of coriander powder, 1 tsp of cumin, 8-10 black peppers (if powdered then take ¼ tsp), 1 tsp of salt and ½ cup of chopped coriander leaves (if you have parsley then take that instead).  Now grind them lightly without adding water.  It takes time to grind them because it is grinding dry, so grind it intermittently while lowering it.

Now take them out in a bowl and add 2 tbsp of gram flour (besan gives good binding to it) and ¼ tsp of baking soda (you can skip it).  Mix the whole mixture well, the dough for falafel will be ready.

Process of making Falafel

Apply some oil on the hands and make a little dough.  Mash it and make it in the shape of a peda.  Heat oil in a pan and put them in the oil, then fry them till they turn light brown.  Make all the falafel like this, falafel will be ready.

In this way the falafel and hummus will be ready to serve.  Put the hummus on a plate and add 1 tsp of olive oil and a little red chili or chili flakes on top.  Then enjoy its taste with falafel.
