Process of making Shahi Paneer
Cut 200 grams of paneer into small pieces. Now put ½ tsp of cumin, 2 bay leaves, 1 cinnamon, 4 cloves, 10-11 black peppers and 1 big cardamom (peeled and take out the seeds) in the pan. Roast these spices on low-medium flame till the cumin seeds change color slightly.
Reduce the flame to low after it smells good and changes color slightly. Add tomato-green chili-ginger-cashew paste (2 tomatoes, 1 green chili, ½ inch of ginger and ¼ cup of cashew) to it. Roast them on low-medium flame while stirring continuously.
After frying for 2-3 minutes, add ½ tsp of turmeric, 1.5 tsp of coriander powder, 1 tsp of kashmiri red chilli and 1 tbsp of dry fenugreek (crushed). Fry the spices while mixing them, after mixing, they will start to dry up. Add ¼ cup of water to it and stir it well and fry for 10 minutes.
When the spices become thick, add water according to how thin or thick you want to make the gravy and mix it well. Then add ¾ tsp of salt to it and mix it well. Now cover the gravy and cook for 3-4 minutes.
When the time is up, it will start to boil. After stirring the gravy, add chopped paneer pieces and some green coriander and mix it well. Then cover it and cook on low flame for 5 minutes.
