Dahi Papdi Chaat Famous Agra recipe

Everyone likes to eat chaat. That sour-sweet chaat and at the same time the taste of crispy crust is eaten by everyone. What to say if this chaat is made at home, then today we will make the famous Dahi Papdi Chaat of Agra. The method of making it is very easy, after making it once, you will want to make it every few days.
Ingredients for Chaat Papdi
For Papdi
Refined Flour - 1 cup
Salt - ⅓ tsp
Carom Seeds - ½ tsp
Oil - 2 tbsp
Oil for cooking
For Aloo Masala
Potato - 3 boiled
Green Chilli - 1 finely chopped
Ginger - ½ inch finely chopped
Cumin Seeds Powder - ½ tsp
Salt - ¼ tsp
Black Salt - ¼ tsp
Boiled Peas - ¼ cup boiled
Coriander Leaves - 2 tbsp
For Dahi
Curd - 1 cup
Sugar Powder - 2 tsp
Black Salt - ¼ tsp
For assembling of Dahi Papdi
Meethi Chutney
Black Salt
Roasted Cumin
Chat Masala
Red Chilli Powder
Besan Sev
Pomegranate Seeds (Optional)
Process of making dough for Papdi
In a bowl add 1 cup all purpose flour, ⅓ tsp of salt, ½ tsp of carom seeds (crush and put it in) and 2 tbsp of oil and mix it well. Now add water little by little and knead a hard dough. The dough for papdi will be ready, keep it covered for half an hour.
Process of making aloo masala
Meanwhile, take 3 boiled potatoes in a bowl and mash them well. Now in these mashed potatoes, 1 finely chopped green chili, ½ inch of ginger finely chopped, ½ tsp of cumin powder, ¼ tsp of salt, ¼ tsp of black salt, ¼ cup of boiled peas and 3-4 tbsp of green coriander and mix this mixture well.
Process of making Papdi
After the time is up, mash the dough well and make it soft. Now make small balls and keep them covered so that they do not dry out. Make a ball like a peda and roll it a little thin like a roti. After rolling it thin and big, fold it a little less than half. Now fold it once again and keep it on a plate. After making, make small holes in it with a fork, so that it will not inflate while frying. Similarly make the rest of the papdis.
Process of frying Papdi
Heat oil in the pan on medium flame, remember that the oil should not be too hot. When the oil is slightly hot, put the papdi in it and fry it for 2 minutes. When the crust comes on top, flip it and fry it till it turns golden brown from both the sides. When it turns golden brown, take out the papdi and make the rest in the same way. In this way the papdi will be ready.
In a bowl add curd, 2 tsp of sugar powder and ¼ tsp of black salt and whisk it well, curd for chaat will also be ready.
Process of assembling Dahi Papdi Chaat
Dip a papdi from both the sides well in curd and keep it in a plate. Put potato mixture on it, then a little curd. Now put spicy green coriander chutney, then sweet chutney, black salt, roasted cumin, chaat masala and red chili on it. Then add finely chopped sev and pomegranate seeds. In this way Dahi Papdi Chaat will be ready, serve it and enjoy its taste.

There are 3 things to keep in mind while making papdi:-
- Make the dough a little hard
- While rolling the dough, make it thin
- Keep the flame low while frying the papdis
The remaining papdis can be stored in an airtight container for up to two months.
