Eggless Soft and Moist Malai Cake in Pan

Today we are going to make something new in sweets.  This is a cream cake, it has the taste of cream along with the cake.  It is also very tasty to eat, without eating it you will not be able to know its taste.  This is a very nice sweet, making it once and you will want to make it every few days.  Also, you can make it on any happy occasions or during festivals and feed it to the guests and family members.  Everyone will like it very much.

 

Ingredients for Malai Cake

 

For Cake

 

Refined flour - 1 cup (125 grams)

Baking Powder - 1 tsp

Baking Soda - ¼ tsp

Oil - 2 tbsp

Malai - ½ cup

Powdered Sugar - ½ cup (75 g)

Milk - ½ cup

 

For Rabri Malai

 

Milk - 1 liter

Corn flour - 1 tsp

Sugar - 4 tbsp

Saffron - 15 threads

Almond Flax - 2 tbsp

Cardamom - 4, coarsely ground

Pistachio flakes - 1 tbsp

 

Process of making Cake

 

Put a sieve in a bowl, add 1 cup (125 grams) of all purpose flour, 1 tsp of baking powder and ¼ tsp of baking soda and sieve it, it is a dry mixture.  Now put 2 tbsp of oil, ½ cup of cream and ½ cup (75 grams) of sugar powder in another bowl, this is a thick mixture.  Now beat the ghee mixture well and make it like a cream.

 

Put salt in a pan, keep a stand on it, cover it and heat it on high flame for 7-8 minutes so that a temperature is formed inside and the cake can be baked well.  Now beat the cream one by one and add dry mixture to it and mix it well.  Then add ½ cup of milk little by little and mix it well.  Add 2 coarsely ground cardamoms and mix it, the batter for the cake will be ready.

 

Now grease the vessel in which the cake is to be made by adding some oil.  Put this batter in it and set it.  Now reduce the flame to low and keep this vessel carefully on the stand in the pan.  Then cover it for 35-40 minutes and let it bake on low-medium flame.

 

After the time is up, check the cake with a knife.  When the knife comes out clean, the cake is ready.  Now take it out and cover it with a cloth and let it cool.

 

Process of making Rabri Malai

 

Put some water in a wide pan and spread it out.  Then put 1 liter of full cream milk in it and boil it on high flame while stirring it for a while.  When it comes to boil, reduce the flame to medium and cook it till it becomes thick.  Also, take out 2 tbsp of milk in a bowl and cool it.  When it cools down, add 1 tsp of cornflour and mix it well.  With this, take out a small spoon of milk and soak it by putting 12-15 saffron threads in it.

 

When the milk thickens, mix the cornflour milk well and put it in the pan.  Also add saffron milk to it and mix it well.  Then add 2 tbsp of almond flakes and 4 coarsely grounded small cardamoms and mix it.  Now add 4 tbsp of sugar and cook it while stirring till the sugar dissolves.  Turn off the flame after the sugar dissolves well, in this way the rabri cream will be ready.

 

Process of making Malai Cake

 

When the cake cools down, poke it with the help of a knife, by this the cream will be able to go inside the cake.  After poking, apply a thick layer of cream on the cake.  After pouring it well on the cream cake, put 1 tbsp of almond flakes and 1 tbsp of pistachio flakes on it.  Keep it in the fridge for 2 hours.  When the time is up, the cream cake will be ready.  Cut it into pieces according to your choice and serve it and enjoy its taste.

 

Suggestions

 

When the cake is baked in the pan, keep the flame low-medium.

Make sure to check the cake once after 30 minutes.

While making Rabri Malai, keep stirring it once in a while.

You can eat this cake by keeping it in the fridge for 3 days.
