Instant Khatta Sandwich Dhokla Recipe

Everyone loves to eat Dhokla. But giving a special twist to it, today we will make soft and spongy sandwich dhokla made of lentils and rice. It will be ready with a very easy method. And its sour and pungent taste will remain on your tongue for a long time. Because this dhokla is made from lentils and rice, it will have a special taste.
Ingredients for Chutney Sandwich Dhokla
For Batter For Batter
Rice - 1 cup
Urad Dal - 6 tbsp
Moong Dal - 2 tbsp
Fenugreek seeds - ½ tsp
Flattened Rice - ½ cup
Oil - 1 tbsp
Salt - 1 tsp
Eno Salt - 1 tsp
For Green Chutney
Coriander leaves - 100 grams
Green Chilli - 4
Ginger - ½ inch
Raw Mango - 60-70 grams
Black salt - ½ tsp
Salt - ½ tsp
Cumin Seeds - ½ tsp
For Peanut Chutney
Roasted peanuts - ½ cup
Green Chilli - 1 or 2
Lemon - 1/2
Salt - ½ tsp
For Tadka
Oil - 1.5 tbsp
Black Mustard Seed - ½ tsp
Sesame Seeds - 1 tsp
Curry Leaves - 10-12
Green Chilli - 2-3
Process of making batter
Wash and soak 1 cup of rice. Then wash and soak 6 tbsp of urad dal and 2 tbsp of moong dal and soak ½ tsp of fenugreek seeds in the dal. After this, wash ½ cup of poha well and keep it. Dal, rice and poha have to be kept for 20 minutes.
After keeping them, take out the water in the mixer jar, add rice, poha and 2-3 tbsp of water and grind them lightly. After grinding, take them out in a bowl. Now remove the water in the same jar, add lentils, ¾ cup of curd (if sour curd then take ½ cup) and 1 tbsp of oil and grind it finely. After grinding, put it in the same bowl.
Now add 1 tsp of salt and 1 tsp of eno fruit salt to the batter and mix the batter well. In this way the batter will be ready.
Process of making coriander chutney
In a mixer jar, cut 100 grams of green coriander coarsely (first put a little if it does not come in the jar), 4 green chilies, ½ inch of ginger, cut 1 small raw mango, ½ tsp of black salt, a little more than ½ tsp of plain salt or as per taste, ½ tsp of cumin and 2-3 tbsp of water. Now grind them well. After grinding, put the remaining green coriander in it and grind it back. Now take it out, in this way green coriander chutney will be ready.
Process of making Sandwich Dhokla Recipe
Dhokla will form layers so make it in a bowl or you can also make it in a big container. Grease 3-4 bowls with oil. Now put 3 spoons of batter in these bowls. Then put water in a big vessel and boil it and keep a mesh stand on it. When steam comes, place the bowls on the stand. Now cover it and cook it on low flame for 4 minutes.
Till they are cooked, put as many spoons of green coriander chutney in the bowl as you have taken for the layer of chutney in the middle of the dhokla sandwich. Also, add the same number of spoons of batter and mix it well, the chutney batter will be ready. When the time is up, add the second layer. Spread two spoons of chutney batter in the bowls and cover them and cook for 4 minutes.
After the time is over, reduce the flame to low and apply the third and last layer on it. Put two spoons of plain batter in all the bowls and spread it well. Now cover it on medium flame and cook it for 12 minutes. When the time is up, Dhoklas will be ready. Take them out and cool them. After cooling, separate the dhokla from the corners of the bowl with the help of a knife and take it out on a plate.
Process of making peanut chutney
Put ½ cup of roasted peeled peanuts, 2 green chilies, juice of ½ lemon, ½ tsp of salt and ¼ cup of water in a mixer jar. Now grind it finely, peanut chutney will be ready.
Process of making tadka
Heat 1.5 tsp of oil in a tadka pan. Put ½ tsp of black mustard in hot oil and let it crackle. Reduce the flame to low and put 1 tsp of white sesame seeds in it and turn off the flame. Then add 10-12 curry leaves and 2-3 green chilies cut lengthwise from the middle and mix. The tadka will be ready, pour it little by little on the dhokla sandwich. Lastly, pour the remaining tadka over the peanut chutney.
Dhokla sandwich and chutney will be ready. Serve them and enjoy their taste.
Suggestions
While preparing the batter by grinding lentils and rice, keep in mind that it should be of pouring consistency, neither too thick nor too thin.
