Arbi in Curd gravy - Agra Mathura Special Recipe

Arbi with curd, it is also called rasa of arbi.  This is one of the very special recipes of Agra and Mathura.  This is a very different taste vegetable, if you are bored of eating aloo matar or gobhi aloo, then definitely make this vegetable.  Today we will prepare this recipe by making it with a very easy method.

 

Ingredients for Arbi ka Rasa

 

Taro Root - 8-9 (250 g)

Curd - ½ cup

Chickpea Flour - 1 tsp

Turmeric Powder - ½ tsp

Coriander Powder - 1 tsp

Salt - ½ tsp

Green Chilli - 1 tsp, 2 finely chopped

Red Chilli - ¼ tsp, coarsely ground

Garam Masala - ⅛ tsp

Coriander Leaves - 2-3 tbsp

 

For Tadka

 

Oil - 1 tbsp

Carom Seeds - ½ tsp

Red Chilli - ¼ tsp, coarsely ground

 

Process of boiling Arbi

 

Wash and dry 8-9 (250 grams) arbi in a cooker and simultaneously add 1 cup of water and cook it on high flame till 1 whistle comes.  After a whistle, reduce the flame to low and cook for 3 minutes.  When the time is up, turn off the flame and let the pressure of the cooker release.

 

When the pressure is released, filter the arbi, cool it and peel it.  After peeling, cut them into two pieces.

 

Process of making Arbi ka Rasa

 

Put ½ cup of curd and 1 tsp of gram flour in the mixer jar and grind it.  Now add chopped arbi, whipped curd and 1.5 cups of water to the pan and mix.  Then add ½ tsp of turmeric, 1 tsp of coriander powder, 1 tsp of finely chopped green chilli and ¼ tsp of red chilli.  Now turn on the flame and cook it on high flame while stirring continuously till it comes to a boil.

 

When it comes to boil, add ½ tsp of salt or as per taste and mix it.  Then cook on medium flame for 6-7 minutes.  When the time is up, add ⅛ tsp of garam masala and 2-3 tsp of green coriander and mix it.  Then cook it for 1 minute and the Arbi Rasa will be ready.

 

Process of making Tadka

 

Heat 1 tbsp of oil in a tadka pan.  Put ½ tsp of carom seeds in hot oil and fry them lightly.  After roasting, turn off the flame, add ¼ tsp of coarsely ground red chili, mix it lightly and put it on the vegetable.  Add a little green coriander on it and mix, the arbi rasa with tadka will be ready.

 

Suggestions

 

While making the tadka, keep in mind that it does not burn, otherwise the taste of the vegetable will deteriorate.
