Handvo is a relishing breakfast for Gujarati people, prepared with rice, dal, and vegetables. It is Healthy as well as Delicious. The preparation of this cake is easy, and you would enjoy it with spicy green chutney.
Ingredients Required for Baked Handvo:
Rice - 1/2 cup
Chana Dal - 1/4 cup
Moong Dal - 1/4 cup
Urad Dal - 1/4 cup
Bottle gourd - 1 cup (grated)
Cabbage - 1/2 cup (Sliced)
Carrot - 1/2 cup (grated)
Curd - 1/2 cup
Green coriander - 2 tbsp (finely chopped)
Baking Soda - 3/4 tsp
Salt - 1 tsp
Sugar - 1 tsp
Turmeric powder - 1/4 tsp
Red Chili powder - 1/2 tsp
Green Chili - 2(finely chopped)
Ginger - 1-inch (grated)
Lemon Juice - 2 tsp
Oil - 4 tbsp
Curry Leaves - 8-10
Sesame seeds - 2 tsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Asafoetida - 1 or 2 pinch
Baked Handvo Recipe
Take 1/2 cup of rice, 1/4 cup of chana dal, 1/4 cup of moong dal, and 1/4 cup of urad dal. Wash and soak the dal and rice for 4-5 hours.
Next, coarsely grind the rice and dal in a mixer grinder and take it out in a bowl. Add 1 cup of grated lauki (Bottle gourd), 1/2 cup of sliced cabbage, 1/2 cup of grated carrot to the mixture, and mix well.
Add 1-inch grated ginger, 2-finely chopped green Chilis, 1/2 tsp of red chili powder, 1/4 tsp of turmeric powder, 1 tsp of sugar, 1 tsp of salt, some chopped green coriander, 2 tsp of lemon juice, 1/2 cup of curd to the rice-dal mixture and mix well.
Heat oil in the pan to prepare Tadka. When the oil is hot, add 1 tsp of mustard seeds, 1 tsp of cumin seeds, 2 tsp of sesame, 8-10 curry leaves, and 1 or 2 pinches of hing (asafoetida).
Add 1/2 of the Tadka to the mixture and mix well. Take a container and grease it with oil. At last, we will mix 3/4 tsp baking soda into the mixture.
Add 2 tsp of Tadka to the container and pour the handvo mixture above the Tadka. Spread the mixture evenly and add Tadka over the mixture. Sprinkle some red chili powder over the Handvo.
We have preheated the oven at 200 degrees centigrade. Bake the Handvo at 200 degrees centigrade for 20 minutes. Baking time may vary with different oven models. So, first, bake Handvo for 15 minutes and then keep checking after 5 minutes.
To check, insert a knife inside the Handvo, and it should come out clean to state that Handvo is fully-baked. Keep aside the Handvo and allow it to cool.
Once the Handvo cools, scrape it out using a knife and transfer to a plate. Crispy and delicious Handvo is ready to be served.
