Rice kheer is a popular Indian dessert that is prepared for almost every festival and celebration. The dessert is prepared with rice and milk. It is flavored with cardamom powder and dried-fruits.
Considering the ‘Sawan ka Mahina,’ the auspicious month of the year. Indians prepare kheer at least once a week during this time. So, let’s begin the preparation.
Ingredients required for Rice kheer:
Full-cream Milk - 1 liter
Rice - ¼ cup (50 grams)
Dry coconut - 2 tsp (grated)
Almond - 2 tsp
Raisin - 2 tsp
Cardamom powder -½ tsp
Sugar - ¼ cup (50 grams)
Rice kheer Recipe:
To prepare rice kheer, take a pot with a thick bottom. If you are making kheer with 1-liter milk then, use a bigger pot that can hold 2 liters of milk. Wash the pot thoroughly with water.
Add 1-liter milk in the pot and turn on the gas stove. Allow the milk to boil. When the milk starts to boil, stir it and make sure the spatula touches the bottom. Proper stirring will avoid the sticking of milk at the bottom.
Add ¼ cup of soaked rice. Keep the flame low-medium. We will take short-grain rice, which is primarily used for preparing kheer. Wash and soak ¼ cup of rice for half an hour.
Stir the milk at regular intervals, until the milk thickens, and rice mixes up with milk. Stir the kheer every 1-2 minutes.
While cooking, you will notice cream floating above the milk. You have to dissolve the cream in the milk every time it forms. To make the milk thicker.
[After 15 minutes]
Rice is cooked but still needs to be mixed up with milk. So, we can add dried fruits now. Add 2 tsp of finely chopped coconut, 2 tsp of almonds, and 2 tsp of raisins. Mix and cook everything while stirring it at intervals.
Tip: You can prepare kheer with or without dried fruits.
After cooking for 35 minutes, rice and milk are properly mixed. Add 1/4 tsp of cardamom powder. It will give the kheer a nice aroma & taste. Add 1/4 cup sugar (4 tbsp of sugar) or as per your taste. Mix everything properly.
Cover the pot with a lid and turn off the flame. Leave it for 5 minutes.
[After 5 mins]
Your kheer with prefect thick but runny consistency will be ready. Garnish the kheer with chopped almonds. Kheer is ready to be served.
