Masale bhat Recipe | Maharashtrian Spiced Rice

The Masala Bhaat is a traditional recipe of Maharastra, it has lip-smacking flavour.
Ingredients for rice Bhaat
- Rice - 1 cup (200 gms) (soaked)
- Tomato - 1 (chopped)
- Oil - 2 to 3 tbsp
- Poppy seeds - 1 tsp
- Sesame seeds - 1 tsp
- Bay leaves - 1
- Cinnamon stick - 1 inch
- Prakriti star anise - 1
- Cardamom - 2
- Cloves - 3
- Black pepper - 6 to 7
- Coriander seeds - 1 tsp
- Shah Jeera - ½ tsp
- Dry coconut - 2 to 3 tbsp (grated)
- Cashew - 2 to tbsp
- Capsicum - ½ cup (chopped)
- Cauliflower - ½ cup (chopped)
- Potato - ½ cup (chopped)
- Ginger - 1 tsp (grated)
- Coriander leaves - 2 to 3 tbsp
- Green chilli - 2 to 3 (finely chopped)
- Mustard seeds - ¼ tsp
- Cumin seeds - ½ tsp
- Turmeric powder - ½ tsp
- Red chilli powder - ½ tsp
- Salt - 1 tsp
How to make rice Bhaat
Add a teaspoon of poppy seeds, a teaspoon of sesame seeds, a teaspoon of Royal Cumin seeds, a teaspoon of coriander seeds in the pan. Add a bay leaf, an inch of cinnamon stick, a Prakrti star anise, 2 smaller sized green cardamoms, 3 cloves, 5 to 6 black peppers to it.
Roast the spices while continuously stirring them for 1 to 1.5 minutes and separate them in a plate after roasting. Add 2 to 3 tablespoons of grated dry coconut in the pan and saute it. Separate it in the same plate and add a ½ teaspoon of oil in the pan.
Add 3 to 4 tablespoons of cashews in the pan and roast while continuously stirring it until its colour changes. Remove it in the separate bowl and preheat the pan to cook Masala Bhaat.
Add 2 to 3 tablespoons of oil in it and add 1/4 teaspoon of mustard seeds in the oil.
After roasting the mustard seeds, add a 1/2 teaspoon of cumin seeds to it. Saute the spices and turn the flame to low. Add the chopped potatoes and saute it for 2 minutes. Add a ½ cup of chopped cauliflower and roast it for 2 minutes.
Add a ½ cup of chopped capsicum and roast it crunchy. Add 2 to 3 finely chopped green chilli to it and a teaspoon of grated ginger too. Add a finely chopped tomato and saute it for a minute.
Add the soaked rice to it along with a 1/2 teaspoon of turmeric powder, a 1/2 teaspoon of red chilli, a teaspoon of salt and roast while continuously stirring it. Add 2 cups of water to it and roasted ground spices.
Cook it for 5 minutes on the medium flame. Stir it and again cook it while covering it for 5 minutes on the low flame. After cooking it, move it in the serving bowl and garnish with roasted cashews, finely chopped green coriander. The Masala Bhaat is ready to be served
Suggestions
You can skip any spice according to your choice.
Roast the spices while continuously stirring it.
Do not stir the rice for the longer period, stir it only for a minute.
