Boondi Ladoo। Boondi ladoo recipe video
Ladoo of boondi is the most loved sweet in INDIA. They are made and distributed in every festival.
Ingredients for the boondi ladoo
- Chickpea Flour- 2 cups (250 gms)
- Sugar- 1.5 cups (375 gms)
- Pistachios- 10-12 (grated)
- Green Cardamoms- 8-10 (powder)
- Muskmelon seeds- ¼ cup
- Ghee- for frying
How to make the boondi ladoo
To prepare the batter
Take 2 cups of chickpea flour, add less amount of water in it and mix it to avoid the lumps. Adding much amount of water, in the beginning, makes it difficult to avoid the lumps. Mix them properly to prepare the batter. Add water in the batter and make it of pouring consistency. The 1.5 cups of water are used to prepare this batter. Stir the batter continuously for 4-5 minutes and keep it aside for 10 minutes to set.
For the sugar syrup
Take 1.5 cups of sugar in a vessel, add 0.75 of water in it. Cook it until the sugar dissolves in water and stir it in intervals. Cook and check it after 2 minutes once the sugar dissolves. Check the sugar syrup by dropping it in the vessel using the ladle and if the drop is dropping in the form of 2-3 threads then it is perfect. Whip the batter after 10 minutes for 2-3 minutes to make it smooth.
For the boondi
Preheat ghee in the wok and add 1 drop of batter in the wok to check the ghee. Moderately heated ghee is required to fry the boondi. Use the sieve to fry the boondis with the fine holes and add 2 tbsp of batter over it.
Tap it to drop the batter in it and stir the boondi. Fry them slightly and ren=move them using a strainer. Place the strainer over a bowl so that extra ghee moves back in the bowl. Remove the extra batter from the back side of the sieve for another round to fry the boondi and clean from the front also. Fry all the boondis by the same way.
For the ladoo
Preheat the sugar syrup and switch off the flame once it is heated. Add the boondi in the sugar syrup and add the cardamoms powder in it. Mix all the ingredients properly, cover and keep it aside for the 30 minutes.
After the 30 minutes
Check the boondi as it has absorbed all the sugar syrup and mix them again properly.
Apply some ghee on your palms and take some portion of the mixture. Bind the ladoo by pressing it between your palms and you can decide the size of ladoo according to your choice. Prepare and bind all the ladoos in the same way. Garnish the ladoos with chopped pistachios and serve the ladoos. Dry the ladoos in open air for 4-5 hours and then store them in an airtight container.
You can add the sugar according to your taste
You can use the vegetable oil rather than the ghee.
The sieve is easily available in the market and the online stores.
If the boondis are not round then it means that the batter is thick.
If the batter is thinner then the boondis will be flat.
You can store the ladoo in the refridgerator to consume for 20-25 days.
Do not use the larger sized sieve as they are heavy and diifficult to handle.
