This healthy veggie Turai is less liked by everyone. But this veggie cooked together with moong dal is super tasty to eat.

Ingredients for Turai Moong Daal Subji Recipe
- Turai – 500 grams
- Moong dal – ½ cup (100 grams)
- Tomatoes – 2
- Green chilly – 1-2
- Green coriander – 2-3 tbsp
- Ghee – 2 tbsp
- Asafoetida – 1 pinch
- Cumin seeds – ½ tsp
- Turmeric powder – ¼ tsp
- Red chilly powder – ¼ tsp
- Coriander powder – 1 tsp
- Salt – 1 tsp or to taste
How to make Turai Aur Moong Ki Dal
Rinse the gourds well. Remove stalk from each side and peel the skin. Cut each gourd in to 1-1 inch long chunks.
Grind tomatoes and green chilies to prepare paste.
Heat some ghee in a pressure cooker. When the ghee is hot add cumin seeds into it. After the seeds crackle, add asafoetida, coriander powder and turmeric powder in to it and saute for a while. Now add tomato-green paste to it and saute the masala until oil starts separating from it.
When the masala is roasted well, add turai and moong dal into it. Stir everything really well and saute for 2 minutes. After this add 2 cups of water, red chilly powder and some salt to it. Close the lid with pressure cooker and cook until it whistles once. After this turn off the flame and let steam escape from the pressure cooker. Let the sabzi remain in pressure cooker only.
Dal is now done and ready, transfer it to a bowl. Add remaining ghee into it and mix some green coriander to it. Serve steaming hot moong dal turai with chapatti, paranthas, naan or rice and relish eating.
- You can adjust the spiciness in sabzi as per your taste.
- Ghee added from the top enhances the taste of dal.
- You can skip the use of tomatoes. If you like tangy taste then add some lemon juice to the dal.
