Gajar Aaloo Matar Sabzi Recipe - Potato Curry with Carrot and Peas

Fresh peas and fresh carrots available during the winters make a super yummy and flavorful dish. So why not we prepare this aloo matar sabzi this winters and serve them with steaming hot winters, chapatti or pooris and relish eating.

Ingredients for Potato Curry with Carrot and Peas

  • Carrot - 3 (250 grams)
  • Potatoes - 4 (250 grams)
  • Green peas - 1/2 cup
  • Tomato - 2 (150 grams)
  • Green chilly - 2 
  • Mustard oil - 2 tbsp
  • Green coriander - 2 to 3 tbsp (finely chopped)
  • Cumin seeds - 1/2 tsp
  • Asafoetida - 1 pinch
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1 tsp
  • Salt - more than 1 tsp or to taste
  • Ginger paste - 1 tsp
  • Red chilly powder - 1/4 tsp
  • Garam masala - 1/4 tsp

How to make Gajar Aaloo Matar Sabzi

For making the sabzi, prepare a tomato-green chilly paste. For this, roughly chop the tomatoes and place them in mixer jar, followed by green chilly. 

Heat some oil in a pan. When the oil is hot, add cumin seeds and asafoetida. When the seeds crackle, add turmeric powder, ginger paste, coriander powder and tomato-green chilly paste to the pan. After this add red chilly powder and stir the masala constantly until oil starts leaving it edges. 

Meanwhile chop the veggies. Rinse carrots and potatoes thoroughly and chop them into fine chunks. Keep stirring the masala at regular intervals.

When the masala is roasted well, now add chopped veggies, peas and salt. Mix everything really well so that they are coated well with the masala. After this, ad 1/4 cup water to the sabzi, cover and cook on low flame for 5 minutes. Do check at regular intervals. 

After 5 minutes, check the sabzi. There is some water left in the sabzi and also the veggies are not cooked well. Cover again and cook for 5 more minutes. If still the sabzi is not cooker thorough, let it cook for 3 to 4 more minutes. It will almost take 14 minutes to cook the sabzi.

When the sabzi is cooked through add garam masala and green coriander. Sabzi is now done and ready, transfer it to a bowl and garnish with some green coriander. Serve this sabzi with chapatti, paranthas or rice and relish eating.

Suggestions:

  • It is compulsory to stir the sabzi at regular interval else the spices settle at bottom of the wok and can get overcooked. 
  • You can use dry  mango powder instead of tomatoes in the sabzi. 
  • For 3 to 4 members
