Ingredients for Achari Baingan
- Brinjals - 500 grams (8 to 10) (seeds variety)
- Cumin seeds - 1/2 tsp
- Asafoetida - 2 pinch
- Red mustard seeds - 1/2 tsp
- Fenugreek seeds - 1/4 tsp
- Turmeric powder - 1/2 tsp
- Coriander powder - 1 tsp
- Fennel powder - 1 tsp
- Red chilly powder - 1/4 -1/2 tsp
- Ginger - 1 inch baton (grated)
- Green chilly - 2 (chopped finely)
- Garam masala - 1/4 tsp
- Mango powder - as per taste
- Salt - as per taste - (1 tsp)
- Mustard oil - 2 to 4 tbsp
- Green coriander - 2 to 3 tbsp
How to make Achari Baingan
Wash brinjals thoroughly. Remove stalk and cut them into 1/2 inch thick and 2 inch long chunks. It time to cook the sabzi, so soak the chunks in water.
Add some oil in a wok and heat it. When oil is hot, add cumin seeds and asafoetida into it. After sauteing for while add fenugreek seeds and red mustard seeds as well. After a while, add ginger, green chilly and saute the masala. Also, add turmeric powder, coriander powder and fennel powder. Saute the masala for while and now add chopped brinjals, red chilly powder and salt. Saute the brinjals for 2 to 3 minutes until they are nicely coated with the spices.
Cover the sabzi and cook on low flame for 2 to 3 minutes and check later. Stir the sabzi nicely with help of a spatula and if required, add 1 to 2 tbsp water in the sabzi. Cover again and cook for 3 more minutes. Open the lid and stir the sabzi nicely with a spatula. Brinjals are still not tender, cover again and cook for 2 to 3 more minute. Check again whether brinjals have turned soft or not. Now add mango powder, garam masala and green coriander in the sabzi and mix well.
Achari brinjal is ready, take it out in a bowl and garnish with green coriander sprigs. Serve hot with poori, parantha or rice and relish eating.
