Paneer Masala Recipe

Paneer sabzi can be prepared with numerous styles and this is one of those method. We'll make this sabzi with more spices but will not use cream or milk. Here's the recipe for making Paneer masala.

Ingredients for Paneer Masala

  • Paneer - 250 grams
  • Poppy seeds or cashews - 2 tbsp
  • Tomato - 3 (medium size)
  • Green chilly - 2 to 3
  • Ginger - 1 inch long baton
  • Fresh curd - 1/2 small cup
  • Oil or ghee - 3 to 4 tbsp
  • Asafoetida - 1 pinch
  • Turmeric powder - 1/4 tsp
  • Cumin seeds - 1/2 tsp
  • Coriander powder - 1 tsp
  • Red chilly powder - 1/2 tsp
  • Garam masala - 1/4 tsp
  • Salt - as per taste (1/2 tsp)
  • Green coriander - 1 tbsp (finely chopped)

How to make Paneer Masala

Cut paneer in 1.5 inch wide and 1.5 inch long chunks. 

Wash cashews or poppy seeds and soak them in water for 1 hour. Now grind the soaked poppy seeds and cashews and take out the paste in a bowl. 

Ground tomato, green chilly and ginger in mixture grinder to make a fine paste. Mix curd in this paste.

Whisk the mixture again in the mixture grinder. 

Preheat some ghee in the wok. Place 4 to 5 paneer chunks in ghee and fry until they get brown from both sides. Take out fried paneer chunks in a plate. Likewise fry all paneer chunks. 

Add asafoetida and cumin seeds in leftover ghee. After sauteing cumin seeds, add turmeric powder, coriander powder and red chilly powder. Mix well with help of a spoon. Now add poppy seeds and cashew paste and saute for another 2 to 3 minutes. Add curd-tomato paste in this masala and saute until oil starts separating from it. 

Now add water as per your preference for making gravy and add salt as well. After the gravy simmers, add fried paneer chunks and garam masala. Cook for 2 to 3 more minutes. Masala paneer is now ready. 

Take out the sabzi in a bowl and garnish with some green coriander sprigs. Serve steaming hot paneer masala with parantha, naan or chapatti and rice and relish eating. 

Suggestion:

If you wish to add onion and garlic in the sabzi, then add after sauteing cumin seeds, add 1 chopped onion and 4 to 5 garlic cloves. Saute until onion gets pinkish in color and add rest of the spices as mentioned above.
