Arbi Methi sabzi prepared with boiled arbi and fresh fenugreek leaves taste scrumptious. This savory dish is known as Gaderi methi sabzi in the Uttrakhand region.

Ingredients for Arbi Methi Recipe
- Arbi - 300 grams (boiled)
- Fenugreek leaves - 250 grams
- Tomato - 3 (150 grams)
- Mustard Oil - 2 to 3 tbsp
- Carom seeds - 1/2 tsp
- Asafoetida - 1 pinch
- Green chilly - 2 (minced)
- Turmeric powder - 1/4 tsp
- Coriander powder - 1 tsp
- Salt - 1 tsp or as per taste
- Red chilly - 1/4 tsp
- Green coriander - for garnishing
How to Make Gaderi Methi
Remove stalk of fenugreek. Wash the leaves twice with water, thoroughly and place them in a sieve so that excess water drains out. When all water drains out, chop the leaves. Now dice the boiled arbi in 1 inch chunks. Also, chop tomatoes in small chunks.
Take 2 tbsp oil in a pan and heat. When oil is sufficiently hot, reduce the flame and add carom seeds, asafoetida, minced green chilly, turmeric powder, coriander into it and saute for while.
After sauteing for while, add arbi, salt, red chilly powder and mix everything really well. Add tomatoes as well and cook for 1 minute. Add fenugreek as well and stir nicely. After this cover the sabzi and cook for 3 to 4 minutes. Check later.
Arbi methi sabzi is ready. Take it out in a bowl and garnish with green coriander. Serve this tantalizing arbi methi sabzi with chapatti, parantha or poori and relish eating.
