Cluster Beans Fry( Gwar Phali Subzi) is commonly made in North India. No doubt it is a very tasty vegetable and also very easy to cook. Today we will cook Cluster beans fry (gwar phali subzi).
Ingredients for Gwar phali subzi
- Cluster Beans (gwar phali) - 250 gms.
- Oil - 1 table spoon.
- Heenga - 1 pinch.
- Cumin - 1/4 tea spoon.
- Turmeric Powder - 1/4 tea spoon.
- Coriander Powder - 1 tea spoon.
- Red Chilli Powder - 1/4 tea spoon.
- Green Chilli - 2-3 (finely chopped)
- Salt - 1/2 tea spoon (as per the taste)
- Amchoor Powder - 1/4 tea spoon.
- Green Coriander leaves - 1 table spoon (finely chopped)
Method - How to make Gvar phali subzi
Thoroughly wash the clustered beans, and remove the edges and strings from it. Now cut the beans into 2 inch pieces each.
Now pour some oil in the pan and heat it. Add heeng, cumin into it and fry them till the cumin becomes brown in colour. Now add turmeric powder, coriander powder, green chilli, red chilli and mix them well. Now add salt and cluster beans pieces to it and stir it for 2-3 minutes. Add 1 table spoon water into it, cover it with a lid and leave it for 10 minutes on medium flame.
Now take off the lid, and you will see that the beans have become tender. Add amchoor powder in it and again leave it for 3-4 minutes on a medium flame with a covered lid. Cluster beans vegetable is ready to serve now.
Take out the vegetable in a serving dish and garnish it with finely chopped fresh green coriander. You can serve it with chapatis and paranthas.

I noticed that this does not cook well when fried along with spices. Beans should be pressure coooked first.
