How to Make Tagar or Boora

Tagar is a special kind of Boora. Boora is normally very fine in quality, but Tagar is thick in comparison to it.
Tagar is made with Sugar and is used to make Ladoos and Pede. It enhances the taste of Ladoos. If you are unable to find it in the market, then you can make Tagar at home also.

Ingredients for Tagar
- Sugar - 1 kg. (5 cup)
- Water - 350 gms. (12/3 cup)
- Milk - 1 table spoon.
- Ghee - 1 tea spoon.
Method - How to make Tagar
Take a pan and put sugar and water in it. Keep it on a stove to boil and stir the mixture continuously for 2-3 minutes. Once the mixture starts to boil add milk to it. You will see a dirty foam appearing over the mixture, take it out with the help of a ladle. The dirt of the sugar gets cleaned this way. Cook the mixture for 8-10 minutes. The mixture will turn extremely thick and transparent. Now pour a drop of the mixture on the plate and see that it will freeze in few seconds and also the sugar will stick on the corners of the pan.
Turn off the flame and put the pan on the kitchen shelf. Add 1 tea spoon ghee to the mixture. This will prevent the formation of lumps in the mixture. Stir the mixture continuously to cool it down. Tagar is ready and can be used to make laddus at home. You can use it for over 2-3 months.
