How to make Kuttu Paneer Cutlets
To make aloo paneer kachori, first we’ll peel off and kadukas the potatoes. Grind the cottage cheese and put it in a bowl. Add black pepper and sendha namak to the potatoes. Finally add 1 tsp singhara atta as well. Apply a little oil on your hands so that the potato does not stick to the fingers.
To prepare the stuffing
Cut the cashews into tiny pieces. Heat oil in a pan. Add green chilli and cashews to the pan and roast a little. Now add grated paneer, sendha namak, black pepper, currants and coriander leaves. Keep stirring and roast for about 1-2 minutes. Our stuffing will be ready. Take out the stuffing in a separate bowl and distribute it into 8 parts.
Prepare 8 balls from the aloo dough. Apply a little oil on your hands so that the dough does not stick. Take each ball in your hand press it till it becomes a flat round. Put 1 spoon of the stuffing in the middle of the kachori. Now close the kachori such that the stuffing is enclosed fully inside. Press it gently with your hands. Prepare all the kachoris in similar way.
Put oil in a pan and let it heat. Put as many kachoris as can come at once. Turn on the side of the kachori once it floats and rises in the oil. Cook the kachori till it becomes golden brown in colour. Put the hot kachoris in a plate spread over a tissue. Fry and prepare all the kachoris in the same way.
