Khatta Dhokla - Gujrati white dhokla recipe
The gujarati dish using urad dal and rice can be eaten in the morning as breakfast or during the evening as snacks. Nowadays idli batter is easily available in the market so this khatta dhokla can be made easily.
Ingredients required for making khatta dhokla
Fermented batter of urad dal and rice - 2.5 cup
Sour Curd (Dahi) - ½ cup
Green coriander leaves (Hara dhaniya) - 2-3 tbsp
Oil - 3 tbsp
Curry leaves - 10 to 12
Green chilly (Hari mirch) - 1-2
Ginger paste - 1 tsp
Salt - ¾ tsp or as per taste
Mustard (Rai) - ½ tsp
Eno fruit salt - ¾ tsp
How to make khatta dhokla
Take a plate of 8-10 inches. Grease the plate with oil. Take a utensil in which the plate of batter fits in easily, add 2 cup water to the utensil and let it boil.
Pour the idli batter in a big bowl, add ginger paste, green chilli, salt, curd and 2 tbsp oil to it. Add eno fruit salt to the batter. Now pour the batter on the plate and spread it evenly.
The water inside the pan has started boiling. Now put the dhokla on top of the stand. Cook the dhokla for 18 - 20 minutes on medium flame. After 20 minutes, the dhokla will appear quite fluffy. Remove the dhokla from the flame. Once the dhokla is cool, cut it into pieces using a knife.
For tadka on the dhokla
Heat a pan and add oil to it. Add mustard seeds and curry leaves to the pan and roast it a little. Now put this tadka on top of the batter and spread it on all sides. Garnish the dhokla with coriander leaves. Khatta dhokla can be served with coconut chutney and chilly sauce.
Suggestions :
If you do not like too oily food, then add crushed black pepper and red chilly on top of the dhokla instead of the tadka.
The curd that we have taken is quite fresh but if you are taking old curd then you don’t need to add lemon juice.
The dhokla made using idli batter will remain quite fluffy, even if we do not add anything else but in order to make it more spongy we add eno fruit salt.
